Gluten Free Apple Spice Pumpkin Muffins

My kids love muffins. They normally will leave several bananas to get super ripe so I will make them banana muffins with peanut butter and chocolate chips. I really can’t blame them. They are really good! Since my husband and I are both doing Weight Watchers, I wanted to make muffins that he would be able to enjoy too. These gluten free apple spice pumpkin muffins are not only delicious, but they are Weight Watchers friendly too!

Apple Spice Pumpkin Muffins

Delicious recipe, perfect for the fall! This apple spice pumpkin muffin recipe is 2 pts per muffin on Weight Watchers!

  • 15 oz Canned Pumpkin
  • 1 3/4 Cup Splenda
  • 2 large Eggs
  • 1/2 cup Unsweetened Applesauce
  • 1 Cup Dice Apples
  • 1/2 cup Water
  • 2 1/4 Cup Gluten Free Flour
  • 1 1/2 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 2 tsp Baking Powder
  • 1 tsp Salt


  1. Preheat your oven to 350 degrees. 

  2. Place the canned pumpkin, Splenda, unsweetened applesauce and eggs in a large mixing bowl. Blend well. 

  3. Add all of your dry ingredients, one by one, mixing each one before adding the next. While you are mixing this, you will want to add the half cup of water. Your mix will be very sticky. 

  4. Dice your apples and fold into the mixture.

  5. Because your mix is sticky, you will not want to use paper liners. Spray your muffin tins well and add the apple spice pumpkin muffin mix to each muffin well. 

  6. Place in the oven and bake for about 21-22 minutes.

If you would like to make this with regular flour, use the same amount of your flour as this recipe calls for!

I am not a fan of cinnamon, but I took one for the team and tried one of these muffins to make sure that they turned out well (minus the cinnamon part). And guess what, they did! They are more the consistency of a bread as opposed to traditional muffins. But all in all, minus the cinnamon, these gluten free apple spice pumpkin muffins are very good!

A Few Tips for these Apple Spice Pumpkin Muffins

I’ve tried several different types of gluten free flour. This Namaste Foods Gluten Freeapple spice pumpkin muffins is my absolute favorite. You don’t need to add anything else to it. Just sub it in place of regular flour. Likewise, if you are looking at this recipe and you are thinking, “but I just have regular flour”…that’s OK! Use it!

These batter scoops by Wilton is my favorite thing in my kitchen. It makes perfect sized muffins and cupcakes every single time. If my Silicone Muffin and Cupcake panapple spice pumpkin muffins was clean, I would have totally used that. It was probably the best thing I ever purchased. So far, nothing has ever stuck to it!

If you are following Weight Watchers and you are planning on making these muffins, please create the recipe in your app with the specific ingredients you use. While it came out to 2 points per muffin for me, I would hate for you to use slightly different ingredients and have your numbers come out differently. Also, please note that I used Splenda because that is what I had on hand. If you make it with white sugar, your points will come out differently. You could always make it into mini muffins!

Turkey Cabbage Soup

Fall is here and I love nothing more than the cool weather outside and a warm bowl of soup inside! I’ve told you before about my favorite soup, Chorizo Chicken soup. If you haven’t made it yet, do it! It’s so good! Being that I am on Weight Watchers, I wanted to make a soup I can enjoy, but that was not very many points. I threw a bunch of veggies together with extra lean ground turkey and made the most delicious turkey cabbage soup.

Turkey Cabbage Soup

  • 16 oz Extra Lean Ground Turkey Breast brown
  • 10 oz Rotel Tomatoes, with Habaneros
  • 29 oz Diced Tomatoes
  • 1 med Orange Bell Pepper cut into chunks
  • 4 med ribs Celery chopped
  • 1 small Onion cut into chunks
  • 1 med Yellow Summer Squash cut into chunks
  • 1 small Head of Cabbage cut into chunks
  • 6 cups Fat Free Chicken Broth
  • 1/2 TBSP Extra Virgin Olive Oil
  • 2 cups Water
  • 1 tsp N'Orleans Cajun Seasoning
  • Salt to taste
  • Pepper to taste


  1. Place your extra virgin olive oil in your frying pan and brown the extra lean ground turkey breast.

  2. Place the browned turkey in an 8 qt stock pot. Add your cans of tomatoes. 

  3. Cut up all of your vegetables and place those in the stock pot.

  4. Add your seasonings and pour the chicken broth over top of all of the ingredients. Next add your 2 cups of water. If the vegetables are not completely covered, it's OK!

  5. Cook on medium high and bring your soup to a boil. Turn the heat down and simmer for about 2.5 hours, or until the cabbage and celery are nice and tender. 

This turkey cabbage soup is absolutely delicious! I’ve made cabbage soup before, but this is the first time I thought to add the cajun seasoning. It was a great decision. The cajun seasoning will forever be added to my cabbage soup! The nice thing about cabbage soup is that you can change up the vegetables to your liking. The only reason I added the yellow zucchini squash is because I felt the soup needed another color! Things like green beans, green pepper, etc would also be good to add to your soup! You really cannot go wrong! If you prefer beef broth over chicken broth…use it!

The fact that this turkey cabbage soup is zero points on Weight Watchers is the icing on the cake! I read once that our body burns more calories digesting cabbage than there are in cabbage. Weight Watchers Ranch Dip – 0 Points

One of the things I don’t like with my new journey with Weight Watchers is that regular ranch dip is like 5 points. I don’t know about you, but I don’t want to spend 5 whole points on 2 TBSP of ranch. As I was walking through Target, trying not to spend a billion dollars, and I remembered that my husband told me non-fat greek yogurt is 0 points. And then I got an idea on how to make my own Weight Watchers ranch dip!

If you aren’t familiar with the Weight Watchers Freestyle plan, things like veggies are zero points. This is awesome for me. I love veggies, but more than that, I love ranch dip. You can dip anything in ranch. Just ask my kids. Making a zero point Weight Watchers ranch dip is a total snack game changer!

Quick and easy (and delicious) ranch dip that is Weight Watchers friendly.

  • 1/4 Cup Plain Non-Fat Greek Yogurt
  • 1 tsp Dry Ranch Mix heaping tsp


  1. Place 1/4 cup plain, non-fat Greek yogurt in a small bowl.

  2. Measure 1 heaping tsp of dry ranch mix and stir into the greek yogurt.

The best thing about the Hidden Valley Ranch packets is that they come in a bunch of different flavors. Next time I will buy the fiesta ranch or the spicy ranch! I bet it will be good! We will be having my daughters family birthday party soon. I will definitely be making this Weight Watchers ranch dip for the party! The more 0 point foods around, the better!

Spicy Sausage Egg Muffins

The Keto diet/lifestyle that I have been following for almost three years now, has been the best thing I have ever done for myself. With this diet, I eat a lot of eggs. So, as you can imagine, I am always looking for different ways to make and enjoy eggs. Especially since anytime I eat eggs, it keeps me full and content for hours! The one thing you want, when starting a new diet/lifestyle plan, is to be full and content! These spicy sausage egg muffins are the perfect thing to make at the start of your week to make your mornings easy.

Spicy Sausage Egg Muffins

The perfect Keto, low carb and gluten free recipe to help you get your day started!

  • 1 lb Spicy Ground Sausage
  • 6 Eggs beaten
  • 1 cup Egg Whites beaten
  • 1 TBSP Minced Onion
  • 5 slices Bell Pepper
  • 1 Cup Colby Jack Shredded Cheese


  1. Preheat your oven to 350 degrees.

  2. Put your sausage in a frying pan and cook completely. Set aside.

  3. Put your 6 eggs in a pourable measuring cup like this one. Measure out your 1 cup of egg whites. Beat each separately and then mix together (trust me on this step. It makes things easier)!

  4. If you are using a metal muffin tin, lightly spray each muffin well (I like my Misto for this job). However, I have found that these silicone muffin molds work really well and nothing ever sticks!

  5. Divide your cooked sausage between each of the muffin wells. Next divide the minced onion, bell pepper and cheese.

  6. Pour the egg mixture over each muffin well. Pour slowly.

  7. Place in the oven and back for 25-27 minutes. Mine took 27 minutes.

These egg muffins are delicious! Be sure to eat them warm. However, like I mentioned earlier, these are super easy to make at the beginning of the week for quick and easy breakfast ideas! Be sure to let the spicy egg muffins completely cool before storing them in the refrigerator. Simply pull one out in the morning and reheat in the microwave. I heat mine in 25 second intervals.

If you are following the Keto diet, you are probably wondering what the macros are. As always, I recommend you put the exact ingredients you purchase to get the most accurate macros. Also, look at all the options for sausage. The sausage I purchased had zero carbs. While most had zero carbs. Some did contain a few carbs.

The macros, according to the ingredients I purchased are:

  • 196 calories
  • 15.1g Fat
  • 10.9g Protein
  • 1.3g Carbs

The nice thing about these spicy sausage egg muffins, is that you can change up your ingredients (which will also change your macros). Next time I plan on making spinach and cheese egg muffins or even chorizo and cheddar (not sure what cheese goes with chorizo!) egg muffins!

Gluten Free Chewy Sugar Cookies

My absolute favorite cookie in the world is a sugar cookie. While I will eat the thin and sort of crispy sugar cookies, the ones that really get me excited are the chewy sugar cookies. You know the kind I’m talking about. The ones with the center that is just barely done. Before I started the Keto diet, I am embarrassed to say how many sugar cookies I was able to eat in one sitting. I . wouldn’t call myself a master baker, but I am able to follow a recipe. The one thing I was never able to make very well were sugar cookies. They always looked deflated and they were most definitely NOT chewy! Until now.

Buying pre-made sugar cookie dough was what I’ve always done. I even went as far as to buy sugar cookie dough that was already cut into shapes for Christmas. Not even lying. That solved several issues for me. My inability to make good, chewy sugar cookies, and not having to deal with flour all over my kitchen with my kids cutting out cookies. I am not that kind of mom and that’s OK! Once I learned that I needed to eat gluten free, I pretty much figured my chewy sugar cookie days were over. NOPE!

  • 3/4 cup Salted Butter, softened 
  • 1 1/2 cups Sugar
  • 2 Large Eggs
  • 1 1/2 tsp Vanilla
  • 2 1/2 cups Gluten Free Flour (I prefer this brandchewy sugar cookies)
  • 3/4 tsp Baking Powder
  • 1/4 heaping tsp Salt

One thing I learned, when I was making these sugar cookies, was that not all baking powders were gluten free. I quickly dumped what I had and purchased the Clabber Girl brand. It says right on the container that it is gluten free. Better safe than sorry. Also, I baked cookies for the first time with parchment paper on the baking sheet and it made a HUGE difference in getting those chewy sugar cookies! I will definitely be doing that again the next time I make these cookies! One thing I will be doing the next time I bake these is using lemon extract in place of vanilla. I bet that will taste delicious!
