Total Kick Butt Baked Beans!!

Normally I am not a big baked bean fan, but my husband loves them and we were having friends over for a BBQ so I made them. They were AWESOME! Absolutely the best baked beans I have ever had (if I don’t say so myself)!

So I figured I would share it with you all. I got the recipe from here.

Southern Baked Beans

1 can baked beans
1/4 cup onions, chopped (I used dried minced onions because I did not have an onion)
1/2 cup brown sugar, firmly packed
1/4 cup Ketchup
2 tsp mustard
2 tsp Worcestershire sauce

I put everything in the crock pot until it was nice and bubbly, then switched it to warm until ready to serve.

Yum Yum!!

What’s for dinner, Thursday

I haven’t posted any recipes I’ve been making in quite awhile. Today’s is pretty good. And yes, it’s in the crock pot. I try to use the crock pot at least once or twice a week.

Today’s recipe is from the The Busy Mom’s Slow Cooker Cookbook:

Teriyaki Pork Chops

1/3 cup Teriyaki Sauce
1TBS brown Sugar
1/2 tsp ground ginger
4 boneless pork chops

Place pork chops in crock pot. Mix ginger, sugar, and sauce in a bowl and pour over the pork chops. Cook on low for 7-8 hrs

4th of July Cake

It didn’t seem right to post this on the other two posts about being sick…doesn’t seem to go together very well!

Anyhoo, this is the cake that I made for our 4th of July BBQ that we went to at a friend’s house:

For the cake part, I bought a lemon flavored cake mix at Meijer and made the cake according the package directions using a 13 x 9 pan. Be sure to really grease the pan well. I like to use Wilton Cake Release.

Frosting

1 cup granulated sugar
1/2 cup shortening
1 stick butter
2/3 cup milk
3 TBS flour

1. Beat the granulated sugar, shortening and butter together until creamy (takes a LONG time).
2. Warm the milk in the microwave to just more than room temperature. The warmer, the better…but not hot.
3. Add a little bit of flour to the mixture and beat. Then add some milk and beat. Alternate until the sugar is dissolved.

**I used a dairy free butter (not margarine) and vanilla flavored soy milk.

I made the cake the day before and frosted it the day of the party. One thing I would have done differently is to cut the strawberry halves in half again. They were too large and I was unable to make the cake an authentic flag with the appropriate amount of stripes.

Must have breakfast recipe

I am not much of a breakfast food person. Unfortunately (or fortunately) everyone in my house LOVES breakfast foods. I stumbled across this recipe either in a Weight Watchers magazine or got it from someone at my wedding shower and it is the best bread EVER!

Try this bread out. Your family will love you even more for it!

White Chocolate Blueberry Bread

1 box white cake mix
3/4 c flour
1 tsp orange peel
1 c frozen blueberries
1 lg egg
2 egg whites
3/4 c water
1/2 c orange juice
2 TBS apple sauce
1 c white chocolate chips

1. Preheat the oven to 350. Prepare two loaf pans with cooking spray.
2. Mix cake, flour and orange peel. Add egg, egg whites, water, orange juice and applesauce.
3. Fold in white chocolate chips and blueberries.
4. Spread evenly between two pans.
5. Bake for 1 hour or until a toothpick comes out clean in the middle.

Salsa Pork Recipe

This is a family favorite. I make it at least 2 times in a month and serve it over rice. All you need is:

-A crock pot.
-Boneless pork chops
-Large jar of salsa (or 2 smaller jars…1 medium and 1 mild)

Plop everything in the crock pot and cook on low for 8-10 hrs if frozen or 6 hours if thawed. Time also depends on how thick the pork chops are.

You can also make this recipe with chicken, however I think the pork tastes much better. I also like it best when I put the pork in frozen.
