Gluten Free Chewy Sugar Cookies

My absolute favorite cookie in the world is a sugar cookie. While I will eat the thin and sort of crispy sugar cookies, the ones that really get me excited are the chewy sugar cookies. You know the kind I’m talking about. The ones with the center that is just barely done. Before I started the Keto diet, I am embarrassed to say how many sugar cookies I was able to eat in one sitting. I . wouldn’t call myself a master baker, but I am able to follow a recipe. The one thing I was never able to make very well were sugar cookies. They always looked deflated and they were most definitely NOT chewy! Until now.

Buying pre-made sugar cookie dough was what I’ve always done. I even went as far as to buy sugar cookie dough that was already cut into shapes for Christmas. Not even lying. That solved several issues for me. My inability to make good, chewy sugar cookies, and not having to deal with flour all over my kitchen with my kids cutting out cookies. I am not that kind of mom and that’s OK! Once I learned that I needed to eat gluten free, I pretty much figured my chewy sugar cookie days were over. NOPE!

Gluten Free Chewy Sugar Cookies

Ingredients

  • 3/4 cup Salted Butter, softened 
  • 1 1/2 cups Sugar
  • 2 Large Eggs
  • 1 1/2 tsp Vanilla
  • 2 1/2 cups Gluten Free Flour (I prefer this brandchewy sugar cookies)
  • 3/4 tsp Baking Powder
  • 1/4 heaping tsp Salt

One thing I learned, when I was making these sugar cookies, was that not all baking powders were gluten free. I quickly dumped what I had and purchased the Clabber Girl brand. It says right on the container that it is gluten free. Better safe than sorry. Also, I baked cookies for the first time with parchment paper on the baking sheet and it made a HUGE difference in getting those chewy sugar cookies! I will definitely be doing that again the next time I make these cookies! One thing I will be doing the next time I bake these is using lemon extract in place of vanilla. I bet that will taste delicious!


Banana Muffins with Chocolate and Peanut Butter

One thing my kids really like are muffins. It really doesn’t matter what kind of muffins either. Although, they are rather partial to banana muffins. Can you blame them? There are very few things better than bananas, chocolate or peanut butter. Add all of those things together and you have epic banana muffins with chocolate and peanut butter.

Banana Muffins with Chocolate and Peanut Butter

Ingredients

  • 1 cup Sugar
  • 1/2 cup Butter, softened
  • 2 Eggs
  • 2-3 Ripe Bananas, mashed (about 1 cup or so)
  • 2/3 cup Peanut Butter
  • 1 TBSP Milk
  • 1 tsp Vanilla Extract
  • 2 Cups Gluten Free Flour (Try thisbanana muffins)
  • 1 TBSP Unsweetened Cocoa
  • 1 tsp Baking Soda
  • 1/2 tsp Salt

Directions

  1. Preheat your oven to 425 degrees.
  2. Cream your butter and sugar together until completely incorporated. Next add your eggs, one at a time, beating well after each egg you add.
  3. Beat in the bananas, peanut butter, milk and vanilla.
  4. Combine all of your dry ingredients and add it to your wet ingredients little by little. Mix the two together with a large spoon or spatula.
  5. Put your banana muffins batter in the fridge for one hour.
  6. Fill your muffin liners all the way to the top with your batter.
  7. Bake at 425 degrees for 10 minutes. Lower your oven temperature to 350 degrees and bake for an additional 10-12 minutes. Check it at the 10 minute mark with a toothpick. If it comes out clean, pull them out. If not, leave them in for an additional 1-2 minutes. Mine took the additional 2 minutes.
  8. Allow the banana muffins to cool in the muffin tin for about 3-4 minutes. Then take them out and put them on a wire rack. They will be hot!

So…you’re probably wondering why the two temperatures for the banana muffins. I had read that if you wanted to get that nice domed look that professional bakers get with their muffins and cupcakes, you need to do that with the baking. Normally mine will have that domed look, more so than what they have here, but I accidentally used baking powder instead of baking soda. While they taste pretty much how they should…I don’t think they look like they normally do!

How did they taste?

AMAZING! Both kids devoured one very quickly. Technically I am the only one in the house that has to eat gluten free, but my kids prefer the baked goods I make with gluten free flour better than anything else. They are a tad more dense than non-gluten free baked goods, but they are delicious! However, if you don’t eat gluten free, no worries! Simply make this with regular flour!

Also, another FYI tip for you…if you accidentally use baking powder instead of baking soda and realize it before you put the item in the oven, I have a fix for you. After lots of googling, I read that you can use 3 times the amount of baking powder in place of baking soda. Is it a perfect fix? Probably not as good as using baking soda, but it worked just fine!

Key Lime Bars Recipe

Memorial day is coming up quick, which means the official BBQ season will be in full swing. BBQ’s are one of my absolute favorite part about summer. Typically the foods are all the same, but there is nothing like a burnt hot dog or a big cheeseburger with bread and butter pickles. While watermelon or strawberry shortcakes (what we usually have at BBQ’s for dessert) are great for dessert, surprise your guests with these delicious key lime bars! Like lemon bars, the tartness of the lime will be the perfect end to your BBQ meal!

Key Lime Bars Recipe

Ingredients

  • 2 C Flour (or this gluten freekey lime bars)
  • 1/2 C Powder Sugar
  • 1 C Unsalted Sweet Cream Butter, softened
  • 1/2 tsp Salt
  • 4 Eggs
  • 2 C Sugar
  • 2 tsp Key Lime Zest
  • 1/2 tsp Baking Powder
  • 1/3 C Lime Juice
  • 1/4 C Flour (or this gluten freekey lime bars)

Directions

  1. Preheat your oven to 350° and spray your 9×11 baking dish with your favorite non-stick spray.
  2. In a large bowl, combine the 2 C of flour, powder sugar and salt.
  3. Using a pastry cutterkey lime bars or a fork, cut in the butter until the crust mixture looks like crumbs.
  4. Pour the crust into the pan and pat evenly into the dish.
  5. Bake the crust for 10 minutes. While the crust is baking, begin making the filling.
  6. In another large bowl, whisk together the eggs, lime juice, 1/4 C flour, sugar, key lime zest and baking powder. Whisk until fully incorporated.
  7. Pour the mixture onto the crust and return to the oven and bake for 25 minutes or until set.
  8. Once the bars are cooled, sprinkle with powder sugar and cut into squares. Top with a key lime slice and enjoy!

Orange Cream Loaf Recipe

One of my favorite things to take to get togethers for the holidays, teacher appreciation week or just to make and have at home are banana breads or this Orange Cream Loaf recipe. They are perfect for brunches and with teacher appreciation week coming up, they are perfect to make and donate to the school to be placed in the teachers lounge. A delicious piece of this Orange Cream Loaf is the perfect pick-me-up at this time of year when the kids are SOOOOOO ready to be out of school and have a countdown of exactly how many days they have left!

Orange Cream Loaf Recipe

Ingredients

  • 1 1/2 C Flour
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 3 Large Eggs, room temperature
  • 1 C Sugar
  • 3 TBSP Unsalted Sweet Cream Butter
  • 1 tsp Vanilla Extract
  • 4 tsp Orange Extractorange cream loaf
  • 1 C Orange Juice from 2 1/2 large navel oranges
  • 1/4 C Orange Zest
  • 1/2 C Oil

Directions

  1. Preheat your oven to 350 degrees. Grease your loaf pan (I prefer this Cake Releaseorange cream loaf).
  2. In a medium bowl, combine the flour, baking soda, baking powder, and salt. Set aside.
  3. In another bowl (or your stand mixer this oneorange cream loaf that is on a HUGE sale), combine the eggs, sugar, butter, vanilla extract, orange extract, orange juice, orange zest and oil. Mix until completely combined.
  4. Slowly add in the flour and mix until fully incorporated.
  5. Pour into your prepared loaf pan and bake for 40 minutes. Once done, set aside to cool.

Frosting Ingredients

  • 1 C Powdered Sugar
  • 1/2 C Orange Juice
  • 1/2 C Orange Zest

Frosting Directions

  1. In a medium bowl, combine all ingredients and mix.
  2. Set your Orange Cream Loaf on a plate and pour the glaze over the loaf and let it sit to harden.

Dirt Chocolate Bark with Gummy Worms

It’s SPRING! After the very weird winter we’ve had with the up and down temperatures, thunderstorms, and random snowstorms, I am very ready for spring to be here. That means we are one step closer to summer and flip flops! The thought of barbecuing and all the yummy recipes we will start making again makes me very happy. Especially this super cute Dirt Chocolate Bark with Gummy Worms dessert! This would be a super cute dessert to have at your Easter dinner! Kids would love it!

Dirt Chocolate Bark with Gummy Worms

Ingredients

  • 1 Bag of Dark Chocolate Melting Wafers (like thisdirt chocolate bark)
  • 1 C Oreos, crushed
  • 1/4 C Brown M&M’s (eat the other colors…it’s OK…recipe says so)
  • 1 Bag Sour Gummy Worms
  • 2 Pots or a double boilerdirt chocolate bark
  • 1 Cookie Sheet
  • Wax Paper

Tip…if you don’t want to pick out all the brown M&M’s, just buy this bag of ALL brown M&M’s!

Directions

  1. Add water to the bottom of the two pots (or your double broiler) and place on the stove on high until the water is boiling.
  2. Place the other pot on top, filled with the chocolate wafers. While the chocolate is melting, place wax paper on your cookie sheet.
  3. Once melted, pour onto your cookie sheet.
  4. Sprinkle the crushed Oreos overtop.
  5. Sprinkle the brown M&M’s on top.
  6. Randomly place the sour gummy worms on the dirt chocolate bark.
  7. Place in the fridge for 30 minutes before breaking apart into pieces and enjoying!

Doesn’t this dirt chocolate bark with gummy worms look delicious and fun to eat?!? Sour gummy worms are my favorite! Of course, if you aren’t a fan of the sour gummy worms, swap them out for the regular gummy worms!
