Strawberry White Chocolate Chip Cookies

Christmas is over and Valentine’s day is quickly approaching. I still have one child in elementary school so she’s been pretty excited trying to think up creative Valentines to make for her classmates. Knowing Bella, she will hand make 28 Valentines. She just loves doing that stuff. While she is busy making things for her classmates, I will be making these delicious Strawberry White Chocolate Chip cookies! Move over sugar cookies, there is a new cookie for the cookie jar! Be sure to check the end of the post for a gluten free version of this recipe!

Strawberry White Chocolate Chip Cookies

Ingredients

Directions

  1. Preheat the oven to 350 degrees.
  2. Combine the cake mix, oil and the eggs in a mixing bowl and mix until a soft dough forms.
  3. Add in the white chocolate chips and mix until well combined.
  4. Using a Cookie Scoopstrawberry white chocolate chip, scoop some dough onto parchment paper lined baking sheets, making sure they are 2 inches apart.
  5. Bake for 8-10 minutes.
  6. Once baked, allow the cookies to cool for about a minute or two on the baking sheet before transferring to a wire rack to cool completely.

Tip: Pick up these silicone baking sheets. You will use them for so much and they turn any baking sheet or surface non-stick instantly! Oven safe and easy clean-up too!

Don’t these strawberry white chocolate chip cookies look and sound amazing?!? I haven’t tried this yet, but if you would like to try making these cookies gluten free, I would buy a gluten free white cake mix and add a box of strawberry gelatin to it. Sweet and Salty Cookies Recipe

Have you ever been sitting there eating pretzel sticks when all of a sudden you have this sudden urge to eat something sweet? Like if you don’t eat it right then and there, there will be problems? It can’t just be me! One of my favorite combinations is sweet and salty together. I was at Costco once and they were sampling a delicious chocolate with sea salt sprinkled on top. They were to die for! So good! If you’re like me, then you will love this recipe for sweet and salty cookies! It’s the perfect amount of sweet with the perfect amount of salty all wrapped up in a cookie!

Sweet and Salty Cookies Recipe

  1. Preheat the oven to 350 degrees.
  2. Combine the cake mix, oil and eggs in a mixing bowl and mix until a soft dough forms.
  3. Add in the Reese baking chips, M&M’s and the pretzels. Mix until well combined.
  4. Using a small cookie scoopsweet and salty cookies, scoop some dough onto a parchment paper lined baking sheet, 2 inches apart.
  5. Bake for 8-10 minutes.
  6. Once baked, pull the sheet out of the oven and let sit for 1-2 minutes. Transfer the cookies to a wire rack to fully cool.

Is your mouth watering yet? My gosh these sound amazing, don’t they? The nice thing about these cookies is that you can change them up for your individual taste. Take out the Reese baking chips and add dried cranberries instead. Maybe even swap out the regular M&M’s and use one of the white chocolate M&M’s (I forget the exact name for those, but I’ve seen them at Target before). The possibilities are endless!

S’mores Cookies Recipe

One thing I love are S’mores. Since going gluten free, I haven’t had any S’mores because I haven’t found a gluten free graham cracker that I really like all that much. However, what I do have for you is an absolutely delicious S’mores cookies recipe that you can definitely make gluten free, if you’d like! This incredibly easy recipe is one that you will want to make and take to your holiday get together or just make them and keep them all for yourself. I won’t tell!

Ingredients

  • Fudge Chocolate Cake Mix (or this gluten free cake mixs'mores cookies)
  • 2 Eggs
  • 1/2 C Oil
  • 1/2 C Chocolate Chips
  • 1 C Mini Marshmallows

Directions

  1. Preheat the oven to 350 degrees.
  2. Combine the cake mix, oil and eggs in a mixing bowl and mix until a soft dough forms.
  3. Add in the chocolate chips and mix until well combined.
  4. Using a small cookie scoops'mores cookies, scoop some dough on to a parchment paper lined baking sheet, 2 inches apart.
  5. In the center of each cookie, place a mini marshmallow.
  6. Bake for 8-10 minutes.
  7. Let the cookies sit on the baking sheet for about 1-2 minutes. Then transfer the cookies to a wire rack and let cool fully.

Celebrating the holidays with your friends is really fun and it doesn’t have to take away the time you spend with your family. Thanksgiving is my absolute favorite holiday. While I get together with family on the actual holiday, hosting a Friendsiving the weekend before is a super fun tradition. Host your Friendsgiving this year and wow your friends by spicing up your old recipes with Tyson® Brand products from Walmart. Just like this twist on an old Pigs in a Blanket recipe…instead make Bacon Wrapped Smokies!

Using delicious Tyson® Brand products from Walmart, I was able to recreate the tried and true Pigs in a Blanket recipe with this lower carb bacon wrapped smokies appetizer. I bought Wright Brand® Bacon (hickory smoked) and Hillshire Farm® Lit’l Smokies® Smoked Sausages. I opted to purchase the beef smokies, but next time I may purchase the Hillshire Farm® Lit’l Smokies® Smoked Sausages that are cheddar filled.

Bacon Wrapped Smokies

Ingredients

  • One package Hillshire Farm® Lit’l Smokies® Smoked Sausages
  • 11 slice of Wright Brand® Bacon (Hickory Smoked)
  • 1/4 cup Hot Sauce
  • 3 TBSP Butter, melted
  • Toothpicks

Directions

  • Preheat your oven to 375 degrees. Prepare a baking sheet that has sides with foil. Soak your toothpicks in water.

(do not skip this step. I do not wan you to potentially have a fire inside your oven. Soak the toothpicks for about 10 minutes)

  • Open your Hillshire Farm® Lit’l Smokies® Smoked Sausages and place them in a bowl. Trust me, you want to do this step too. It makes grabbing those slippery little things much easier!
  • Place a slice of your Wright Brand® bacon on a cutting board and cut it into thirds.

  • Next, take one of your Hillshire Farm® Lit’l Smokies® Smoked Sausages and wrap the piece of Wright Brand® Bacon (Hickory Smoked) around it. Secure the Wright Brand® Bacon with a toothpick. Make sure your toothpick goes through both ends of the bacon.
  • Repeat the last step until all of the Hillshire Farm® Lit’l Smokies® Smoked Sausages are wrapped in Wright Brand® Bacon. Place on your baking sheet.

  • Place your butter and hot sauce in a microwave safe bowl and heat in the microwave until the butter is completely melted.
  • Using a pastry brush, brush your hot sauce and butter mixture onto each of the bacon wrapped smokies. Flip them over and repeat until they are thoroughly coated.

  • Bake in the oven for 25 minutes.
  • Once your timer goes off, remove the bacon wrapped smokies from the oven. At this point you can either add more of the hot sauce and butter mixture or you can just flip them over.
  • Put them in the oven for an additional 12 minutes. With just a little over 4 minutes remaining, turn your broiler on high to crisp the bacon.
  • Place your Wright Brand® Bacon wrapped Hillshire Farm® Lit’l Smokies® Smoked Sausages on a serving dish and serve warm with your favorite dipping sauce. I opted for Ranch!

Not only are these bacon wrapped smokies super easy to make, but they are quick too! This allows you to spend more time chatting and playing games (we like to play board games in this house!) at your Friendsgiving! Why slave over a hot stove when you don’t have to! You know what, we all like to impress our friends with tasty recipes. By sticking to tried and true brands like Tyson® Brand foods from Walmart, you can impress all you want and stay within your budget!

The nice thing about hosting a Friendsgiving is you can decide to make it a potluck and have each person bring something. I’ve often made an appetizer and offered to make the main course item like Tyson® Cornish Hens. However you choose to do it, everything will be fine because you are there to hang out and have fun with your friends. Another idea, and one I think I will use this year, is to just have appetizers and desserts! You better believe I will be making this appetizer. It is delicious! If you would like them to be a little spicier, simply add more of your favorite hot sauce!

Pumpkin Coffee Cookies with Maple Icing

There are a few things in this world that it seems like everyone goes crazy for and that is anything pumpkin flavored and anything having to do with coffee. I wish I was one of those people. I can’t tell you how many times I see my family go crazy over everything pumpkin spice flavored and I wished I liked it, but I don’t. The same for coffee. I actually cannot stand the smell of coffee. I tolerate it because my husband would walk around with a coffee IV if he could. So for you pumpkin spice, coffee lovers, this recipe for pumpkin coffee cookies with maple icing is all for you!

Pumpkin Coffee Cookies with Maple Icing

Ingredients

Pumpkin Coffee Cookies

  • 2 sticks unsalted butter, room temperature
  • 1 1/4 C sugar
  • 2 C flour
  • 1/2 tsp baking powder
  • 3/4 tsp cinnamon
  • 1/4 tsp salt
  • 2 eggs, room temperature
  • 2 TBSP pumpkin spice coffee grounds
  • 1 tsp pumpkin spice extract

Maple Icing

  • 1 package cream cheese, room temperature
  • 4 TBSP unsalted butter, room temperature
  • 4 C powder sugar
  • 1 tsp vanilla
  • 1/2 tsp maple flavored extract

Directions

Pumpkin Coffee Cookies

  1. Preheat the oven to 350 degrees. Line your cookie sheets with parchment paper.
  2. Blend the flour, baking powder, salt and cinnamon together in a bowl and set aside.
  3. In a second bowl, using your electric mixer (I’m partial to this KitchenAid hand mixerpumpkin coffee cookies), cream the butter and sugar together until the butter is smooth and light in color. Add one egg at a time while continuing to mix with your electric mixer. Stir in the pumpkin spice extract. Stir well to make sure all ingredients are well blended.
  4. Slowly add in the flour mixture and mix thoroughly. Add the pumpkin spice coffee grounds, stirring to mix well.
  5. On a lightly floured surface, roll dough until 1/4 inch thick. Use a 2-inch circle cookie cutter and place 1-2 inches apart on your lined cookie sheets.
  6. Bake 350 degrees for 19-22 minutes or until the center of the cookie is firm. Allow to slightly cool while on the cookie sheet, then transfer to a wire rack to cool completely.

Maple Icing

  1. Using your electric mixer, cream together the cream cheese and butter.
  2. Slowly whip in the powder sugar. Once thoroughly blended, add the vanilla and maple extracts. Mix well to blend all of the ingredients together.
  3. Scoop the icing into a pastry bag with a large tip. Squeeze a thin layer of the frosting on the bottom half of each of the cookie pairs.
  4. Immediately place the other half of the cookie on top of the iced cookie half.

If you are following a gluten free diet, I would replace the regular flour in this pumpkin coffee cookie recipe with your favorite gluten free flour. This is my favorite gluten free flourpumpkin coffee cookies (and this is a great price too!). Everything I’ve made with my gluten free flour turns out just like it would if I would have used regular flour! No one usually knows either!
