Celebrating the holidays with your friends is really fun and it doesn’t have to take away the time you spend with your family. Thanksgiving is my absolute favorite holiday. While I get together with family on the actual holiday, hosting a Friendsiving the weekend before is a super fun tradition. Host your Friendsgiving this year and wow your friends by spicing up your old recipes with Tyson® Brand products from Walmart. Just like this twist on an old Pigs in a Blanket recipe…instead make Bacon Wrapped Smokies!

Using delicious Tyson® Brand products from Walmart, I was able to recreate the tried and true Pigs in a Blanket recipe with this lower carb bacon wrapped smokies appetizer. I bought Wright Brand® Bacon (hickory smoked) and Hillshire Farm® Lit’l Smokies® Smoked Sausages. I opted to purchase the beef smokies, but next time I may purchase the Hillshire Farm® Lit’l Smokies® Smoked Sausages that are cheddar filled.

Bacon Wrapped Smokies

Ingredients

  • One package Hillshire Farm® Lit’l Smokies® Smoked Sausages
  • 11 slice of Wright Brand® Bacon (Hickory Smoked)
  • 1/4 cup Hot Sauce
  • 3 TBSP Butter, melted
  • Toothpicks

Directions

  • Preheat your oven to 375 degrees. Prepare a baking sheet that has sides with foil. Soak your toothpicks in water.

(do not skip this step. I do not wan you to potentially have a fire inside your oven. Soak the toothpicks for about 10 minutes)

  • Open your Hillshire Farm® Lit’l Smokies® Smoked Sausages and place them in a bowl. Trust me, you want to do this step too. It makes grabbing those slippery little things much easier!
  • Place a slice of your Wright Brand® bacon on a cutting board and cut it into thirds.

  • Next, take one of your Hillshire Farm® Lit’l Smokies® Smoked Sausages and wrap the piece of Wright Brand® Bacon (Hickory Smoked) around it. Secure the Wright Brand® Bacon with a toothpick. Make sure your toothpick goes through both ends of the bacon.
  • Repeat the last step until all of the Hillshire Farm® Lit’l Smokies® Smoked Sausages are wrapped in Wright Brand® Bacon. Place on your baking sheet.

  • Place your butter and hot sauce in a microwave safe bowl and heat in the microwave until the butter is completely melted.
  • Using a pastry brush, brush your hot sauce and butter mixture onto each of the bacon wrapped smokies. Flip them over and repeat until they are thoroughly coated.

  • Bake in the oven for 25 minutes.
  • Once your timer goes off, remove the bacon wrapped smokies from the oven. At this point you can either add more of the hot sauce and butter mixture or you can just flip them over.
  • Put them in the oven for an additional 12 minutes. With just a little over 4 minutes remaining, turn your broiler on high to crisp the bacon.
  • Place your Wright Brand® Bacon wrapped Hillshire Farm® Lit’l Smokies® Smoked Sausages on a serving dish and serve warm with your favorite dipping sauce. I opted for Ranch!

Not only are these bacon wrapped smokies super easy to make, but they are quick too! This allows you to spend more time chatting and playing games (we like to play board games in this house!) at your Friendsgiving! Why slave over a hot stove when you don’t have to! You know what, we all like to impress our friends with tasty recipes. By sticking to tried and true brands like Tyson® Brand foods from Walmart, you can impress all you want and stay within your budget!

The nice thing about hosting a Friendsgiving is you can decide to make it a potluck and have each person bring something. I’ve often made an appetizer and offered to make the main course item like Tyson® Cornish Hens. However you choose to do it, everything will be fine because you are there to hang out and have fun with your friends. Another idea, and one I think I will use this year, is to just have appetizers and desserts! You better believe I will be making this appetizer. It is delicious! If you would like them to be a little spicier, simply add more of your favorite hot sauce!

Cast Iron Skillet Meals – Harvest Chicken

Summer vacation is finely upon us! No more alarms, no more bagged lunches to make, the kids sports slow way down…we have total freedom until September! To say I’m happy would be a total understatement! Without all the rushing around everywhere, I seem to do my best cooking during the summertime. I actually make real meals and not quick things that can be heated up on the go or eaten quickly before bed! One thing I like to make are cast iron skillet meals. They are easy and really really good! Not to mention…clean up is really easy when you’re only using one pan!

Harvest Chicken – Cast Iron Skillet Meals

Ingredients

  • 4 Chicken Thighs
  • 1 1/2 cups Tomatoes
  • 1 large Zucchini
  • 1 large Yellow Squash
  • 2 TBSP. Lemon Pepper Seasoning (I like this onecast iron skillet meals)
  • 1 TBSP. Garlic Salt
  • 1 TBSP. Ranch Dressing Seasoning
  • 3 TBSP. Olive Oil
  • Curled Parsley

Directions

  1. In a large bowl, add your chicken thighs and evenly coat with lemon pepper, garlic salt and place in your refrigerator for one hour to marinate.
  2. In your cast iron skilled, add 3 TBSP. of olive oil and place on your stove top at medium to high heat.
  3. Once the pan is hot, add your chicken thighs. Cook on high for 6 minutes on each side.
  4. Reduce your heat to medium and cook on both sides for an additional 5 minutes to insure it is completely cooked.
  5. Pull the chicken thighs out of the pan and place on a plate. Set aside.
  6. Slice your yellow squash and zucchini into round circles about 1/4 inch in thickness.
  7. Add your zucchini and yellow squash to the pan, sprinkle with ranch dressing seasoning and saute for 8 minutes on medium, tossing often.
  8. Now add your tomatoes to the vegetables and continue to saute for another 5 minutes.
  9. Turn your stove top heat off and place the chicken back in the skillet.
  10. Garnish with the curled parsley.

Bacon Wrapped Jalapeno Poppers

Do you make New Year’s resolutions? Normally I do not. I feel like it gets all this hype and then by the second week of January, they are quickly forgotten. However, this year I did make a goal for my life and for my family. I wanted us to make some changes in our life. Change some of the foods we are eating, exercise more, etc. It’s mid-June and I can honestly say, we’ve stuck to that goal! One of the food choices we made was to take out a lot of the processed junk we used to eat and replace it with REAL food! For instance, this recipe below for bacon wrapped  jalapeno poppers using Weight Watchers Whipped Cream Cheese is amazing! But then again…anything wrapped in bacon is great!

These delicious, bacon wrapped, stuffed with real and all natural Weight Watchers Whipped Cream Cheese are so full of flavor and so easy to make! But then again, anything stuffed with cheese and wrapped in bacon is going to be good! I had the idea to make these because, to be honest, I love jalapeno poppers, but I can’t have the breading on them and I was trying to stay away from fried foods. I had made a bacon wrapped meatloaf a few years ago, so I thought I could come up with my own jalapeno popper and wrap it in bacon!

For the bacon wrapped jalapeno poppers, you need cream cheese, shredded cheese, spices, jalapenos and bacon. That’s it! I picked up the Weight Watchers Whipped Cream Cheese and the rest of the ingredients while I was grocery shopping at Kroger (gotta love the fuel points…2x the points if you shop on Friday, Saturday or Sunday…FYI)!

Bacon Wrapped Jalapeno Poppers Recipe

Ingredients

Directions

  • Preheat your oven to 400 degrees. Place a piece of foil on your baking sheet with sides. Cut each of your jalapenos in half, lengthwise and remove the seeds. Note…if you want a little more kick to your jalapeno poppers, leave some of the seeds.
  • Mix your cream cheese, shredded cheese and spices in a mixing bowl

  • Place your jalapenos on to the baking sheet and fill one side with a bit of the cream cheese mixture. You want to mound it over a bit so it will fill in the other jalapeno when you fit the two halves together. Do this with all eight jalapenos.

  • Next you need to wrap each jalapeno using one strip of bacon per jalapeno. You could secure the bacon on with a toothpick, if you wanted, but I didn’t find it necessary. The tighter you wrap the bacon, the better.
  • Bake in the oven for 25 minutes. After they are done baking, turn your broiler on high and broil for 3-4 minutes to crisp up the bacon!

Tips

Do not over stuff the jalapenos with the cream cheese mixture. As you can see above, the jalapenos my husband “helped” with, exploded. Also, if you make too many (like we did), simply store them in the fridge and reheat later! My husband went out of town for work and took a few with him. He said they tasted great!

Fuzzy Navel Homemade Gummy Bears

Making homemade gummy bears has become quite the thing in our house! Everyone has their favorite flavors. My husband loves the lime gummy bears and my kids love the raspberry gummy bears…me, on the other hand, I think the Fuzzy Navel gummy bears I made yesterday are the best! These non-alcoholic version of fuzzy navel cocktails are delicious! Just the right amount of peach and orange flavors to really compliment one another. Using my gummy bear moldfuzzy navel I found on Amazon, making these gummy bears are super easy! Especially since the mold I bought comes with a dropper…trust me…you want the mold with the dropper!

Fuzzy Navel Gummy Bears Recipe

Ingredients

  • 1 small box (3 oz) of Peach Sugar Free Jello
  • 1 small box (3 oz) of Orange Sugar Free Jello
  • 3 packets Unflavored Gelatin (I like Knox Gelatinfuzzy navel)
  • 1/2 cup water

Directions

  1. Put the 1/2 cup water into a small sauce pan on low heat.
  2. Add both sugar free Jello packets and all three unflavored gelatin packets.
  3. Mix until it has all dissolved.
  4. Using your dropper that came with your gummy bear moldfuzzy navel, fill each of the little gummy bear compartments with your gelatin.
  5. Place the molds in the freezer for about 10 minutes.

Don’t you love how easy it is to make fuzzy navel gummy bears? Next time I make these, I plan on sprinkling a little citric acidfuzzy navel on the fuzzy navel gummy bears to make them like the sour gummy candies that I used to love! I used to eat that candy until my mouth was raw! If you are following the Keto diet plan like I am, these fuzzy navel gummy bears are a nice little treat for you to have! 4 or 5 gummy bears is about 1 g protein! And trust me, when you have given up sugar for as long as I have, those 4 or 5 gummy bears are plenty!
