Homemade Gummy Bears

I’ve successfully given up sugar for the last 66 days. Say what? I know. It’s crazy. I am the person that used to be horribly addicted to sugar. However, since starting the Keto diet (and losing 44 lbs…go me!), I no longer crave sugar. At all. I can walk into a candy shop and not want to buy anything. Not because I am forcing myself to stick to this diet, but because I just don’t want it. However, there are those times, and I fully admit that it is purely psychological, when I feel like I want something gummy. When that happens, I make my homemade gummy bears!

Making Homemade Gummy Bears!

The homemade gummy bear recipe is super easy. My friend Greg was the one that told me how to make them. Basically you take:

  • 1 big box of Sugar Free Jello
  • 2 packets of Knox Unflavored Gelatin
  • 1/2 cup water

3 Pack Gummy Bear silicone Molds- 150 gummy bears total +3 Droppers- BPA Free3 Pack Gummy Bear silicone Molds- 150 gummy bears total +3 Droppers- BPA Free

Put all of that into a saucepan on low heat and stir, stir stir until it is completely melted. Then pour into your favorite silicone mold (I like this moldhomemade gummy bears for the gummy bear candy), pop it into the freezer for about ten minutes and enjoy! It’s so easy!!

I ordered this particular mold because it came in a two pack AND it came with the little dropper. Let me tell you…that dropper is ESSENTIAL! Just make sure you allow the air bubbles in the dropper to go up to the top or you will end up with bubbles on your gummy bears like I have on a couple at the top!

How Did They Turn Out?

For this particular batch of homemade gummy bears, I decided to use a small package of strawberry Jello and a small package of lemon Jello to make Strawberry Lemonade homemade gummy bears! They are so good! You could totally use the one large box of Jello and make a single flavor, but coming up with different flavors is fun! Next I will be making Lemon Lime and a Fuzzy Navel homemade gummy bear (peach Jello with orange Jello)

Aren’t the homemade gummy bears cute?!? Definitely give these a try! If you are following the Keto diet, this recipe made 94 gummy bears. Using My Fitness Pal, you can totally figure out how many of the gummy bears you can eat for the amount of protein you would like. For instance, one gummy bear has 0 g Fat, 0 g Carbs and 0.3 g Protein. I just ate four gummy bears and that is 1 g Protein!

You can totally buy gummy bears at the store, if you would like…or you can make your own flavors at home using the adorable mold from Amazon!! I did read that you can make sour gummy bears by using Citric Acidhomemade gummy bears, but I haven’t tried that yet!

Keto Chicken Cordon Bleu Recipe

My husband and I have been following the Keto diet since January 23, 2016. We’ve lost quite a bit of weight, feel loads better (and look better too!), and we are eating way better food.One thing my family really likes is chicken. Just the other day I decided to make Keto Chicken Cordon Bleu for dinner. I was a bit unsure how it would turn out or if my family would even eat it. I quickly found that I had nothing to worry about. My daughter, who normally turns her nose up at things before trying it, took one bite and declared it delicious!

I’ve never made a traditional chicken cordon bleu recipe before, but I’ve eaten plenty and this, is a very easy Keto chicken cordon bleu recipe that also tastes amazing! And lets face it, with a hungry husband and two hungry kids, I want easy recipes! Lately I have been purchasing thin sliced boneless, skinless chicken breasts. They cook so much faster and I think they taste better. For this recipe, you will want to have those thin sliced chicken breasts. Trust me!

Keto Chicken Cordon Bleu Recipe

  • 4 Thin Sliced Chicken Breasts
  • 4 slices Ham Lunchmeat
  • 4 slices Swiss Cheese
  • 1 Egg
  • 1/2 cup Parmesan Cheese
  • Salt, Pepper and Garlic Powder, to taste


  1. Preheat your oven to 450 degrees. Place your baking sheet by placing your silicone baking sheetketo chicken on top. So easy!
  2. Place a piece of plastic wrap on a cutting board. Set your thin sliced chicken breasts on the plastic wrap and fold the plastic wrap over so it covers the chicken breasts and pound them even thinner.
  3. Beat your egg and pour it into a shallow bowl. Mix your Parmesan cheese and seasonings together in another shallow bowl.
  4. Flip your chicken breast over, add the ham and Swiss cheese and roll it up. *Tip…next time I will wrap the cheese IN the ham first and place that on the chicken. I think that will help keep the cheese in better.
  5. Holding the chicken breast together, dip it into the egg wash and then roll it in the Parmesan cheese mixture. Place it, seam side down, on your baking sheet. Repeat with the rest of the chicken breasts.
  6. Bake in the oven for 30 minutes.

What Did We Think?

This recipe will not disappoint! It is the best chicken cordon bleu recipe I have ever had!! I especially liked that it tasted good without mustard. I have a huge aversion to mustard and while I’ve eaten other chicken cordon bleu recipes, I’m always convinced I can taste the mustard (even when I really can’t). One of the nice things about the Keto diet is that casseroles and Keto go nicely together. I’ve seen a Pinterest chicken cordon bleu casserole that I have been dying to make. After seeing how well my family liked this chicken dish, I’m sure I will be able to get them to eat a baked chicken cordon bleu cassrole! I’ll be sure to write up the recipe after I make it and share it with you all.

Keto Creamed Spinach Recipe

When I decided to follow the Keto diet, I knew that I would be eating a lot of foods that I don’t normally eat. One of those foods is spinach. More specifically, cooked spinach. As I was researching different recipes, I came across a bunch of Keto Creamed Spinach recipes. After looking through them all, I put together my own recipe based on my husband and I’s own personal taste. It has become one of our favorite recipes and one that I make multiple times a month! I would even dare to say that it is very similar in taste to the Boston Market Creamed Spinach. No joke!

Keto Creamed Spinach Recipe


  • One pkg. Frozen Spinach (I believe it’s 283 grams)
  • 4 TBSP Cream Cheese
  • 1/2 cup Shredded Cheddar Cheese
  • Seasonings of your choice (we like salt and pepper)


  1. Place your frozen spinach into a sauce pan and heat over medium heat. You will want to cook this until the spinach is completely thawed and there isn’t a lot of water in the pan.
  2. Add your cream cheese and mix thoroughly.
  3. Add in your cheddar cheese and stir until it’s completely melted.
  4. Season and enjoy!

Not only is this an easy creamed spinach recipe, but it is, by far, the best creamed spinach recipe I’ve ever had! This particular recipe above serves 2, but it is one of those recipes that is easy to double or triple to serve more. Need a side dish for Easter? Try this Keto Creamed Spinach recipe. Spicy Chicken Thighs Recipe

Since starting the Keto diet, I have learned to love chicken thighs. I know that sounds weird, but up until about a month ago, I never bought chicken thighs before. Honestly, I don’t know why…they are so much cheaper than chicken breasts AND they have a lot more flavor too! One of my favorite recipes that uses chicken thighs is this Chorizo Chicken Soup recipe. It’s delicious! The other day I picked up a package of chicken thighs and made one of the best dinners, even my son declared it a winner! This spicy chicken thighs recipe is also Keto friendly!! Not only is it Keto friendly, but it is also the best chicken thigh recipe EVER!

Spicy Chicken Thighs Recipe


  • Package of Chicken Thighs w/Skin (I used a 5.5 lb package)
  • 6 TBS Unsalted Butter, melted
  • 3/4 cup Frank’s Red Hot Sauce
  • Garlic and Pepper Seasoning (I used my favoritespicy chicken thighs blend)

Pro Tip…pick up this silicone baking mat. It really helps to crips up your chicken thighs. I use it ALL the time!

  1. Preheat your oven to 350 degrees.
  2. Season your chicken thighs on both sides with your garlic and pepper seasoning.
  3. Melt the butter in a microwave safe bowl. Mix the Frank’s Red Hot Sauce in with the butter.
  4. Dip each chicken thigh into the butter and hot sauce mixture, allowing excess to drip off before placing it on your baking sheet with sides, skin side down (I like the Norpro Stainless Steel Baking Panspicy chicken thighs). For more even cooking, place a rack on top of the baking sheet.
  5. Bake in the oven for 35-40 minutes. After the time is up, take the chicken out of the oven, turn the oven to broil (on high), flip the chicken over so it is skin side up, and broil for 15 minutes to get the skin nice and crispy. You may want to rotate the pan halfway through. Don’t they look like the best roasted chicken thighs?

If you are looking for recipes for chicken thighs, this is a must try recipe! I think next time I make them, I will use this spicy garlic seasoningspicy chicken thighs I picked up to add an extra kick! I know some people prefer boneless skinless chicken thighs and that’s OK. I’m sure you could use them in this recipe. You may want to reserve some of the butter/hot sauce mixture to brush on to the chicken periodically while they cook, but it should still turn out great. I haven’t made it this way, but I don’t see why it wouldn’t. Now I’m on the hunt for some good slow cooker chicken thighs recipes! I’m all about those chicken thighs!

Vanilla Flavored Fat Bombs – Keto Diet

I’m like Oprah…I’ve tried every diet out there with very little success. Mostly because I wasn’t seeing much changing or it was too restrictive, which then brings out my rebellious side and I end up eating everything in site. The Keto diet is different. The first week I lost 7 lbs. Of course, the majority of that is water weight, but I’m into my second week now and I’m already down 1.5 lbs (and the week is not over yet). Switching gears and adding more fat into my diet is difficult, I’m not going to lie. But it’s so important to add the fat in. Since we are eating less carbohydrates, we need the fat to fuel our brain and body. Not to mention, food tastes so much better!

Benefits of the Keto Diet

Over the last, almost two weeks, I’ve noticed the following things since starting the Keto Diet:

  • Eating REAL foods
  • You’re satisfied with less food
  • Sugar cravings are completely gone
  • Diet Coke craving is completely gone
  • Sleeping better than ever
  • Mood is better

Like I mentioned above, it’s sometimes hard to get fat in. When you’ve spent the vast majority of your life buying and eating low fat foods, suddenly abandoning that leaves you scrambling at the end of the day. That’s why I make these delicious vanilla flavored fat bombs to help make up the difference. Now while I am no longer craving sugar, these vanilla flavored fat bombs are just what I need every once in awhile.

Vanilla Fat Bombs

Yields 14 Fat Bombs|116 Calories|11.7 g Fat|1.2 g Protein|0.6 g Carbs


  • 8 oz. block of Cream Cheese (I use Walmart brand because it says gluten free on it)
  • 1/2 cup Unsalted Butter
  • 3/4 cup Splenda
  • 1/2 tsp Vanilla


  1. Set the cream cheese and the butter on the counter for awhile so it can warm up a bit.
  2. Place all ingredients in a large bowl and using a hand mixer, blend until smooth.
  3. Place wax paper over a baking sheet or cutting board. Using a spoon, scoop a small amount until the cutting board. Continue doing so until you’ve used up all of the mixture.

You can make these as big or as small as you would like. My recipe makes 14 fat bombs. I use My Fitness Pal to figure out the calories/fat/protein/carbs for this recipe. You will want to do that with the ingredients you use to insure you have the most accurate numbers.

OH. MY. GOSH. These are delicious! It’s like eating a little mini frozen cheesecake. After freezing them for about an hour or two, I store them in an airtight container in the freezer. I would imagine you could store them in the fridge once you’ve frozen them, but I’m telling you, they are so good frozen, I don’t even know that I care to try storing them in the fridge!
