Early on in 2016, I made one heck of a lifestyle change. I decided to drastically change the way I was eating. Going from eating WAY too many carbs and sugar to eating very low carb and zero sugar was difficult at first. Obviously any drastic change in a person’s diet would be difficult, but once I got over the hump, following the Keto diet was the best decision I ever made. Like any new lifestyle change, it’s a little stressful in the beginning trying to figure out to eat. Well stress no more! I put together the following list must try keto recipes!

Keto Diet Plan – Taking Charge of My Health

On January 23, 2016, I decided that I was done being fat. I had gotten comfortable. I knew my husband loved me for me and didn’t care one bit about my size. While that is a great feeling to have and not have to worry about what the one person I care what they think, thinks about me, it led me to just give up and not care about my own health and well being. Maybe not intentionally, but that’s what happened. A friend of mine (shout-out to Summer at The Dirty Floor Diaries) had been talking about the Keto Diet Plan for quite some time…I finally decided to give it a try. Rather than do it by myself, I talked my husband into giving the diet a try with me. Strength in numbers and all. What has happened over the last 4+ months has been amazing.

After having my kids, and over the next several years, I hit my highest weight ever. I also was diagnosed Type 2 Diabetic. It was a real game changer when my doctor told me I as diabetic. Shit was getting real, as they say. I had just turned 30 years old. I wish I could say that I handled the news well those first few weeks, but I didn’t. I cried. I cried about the thought of having to give up all the food I liked. I cried because I thought something was going to happen to my feet (Google told me so). I cried because I didn’t want to put in the work that I needed to with this new diagnosis. And then I woke up. I went to a nutritionist. I learned how to eat so that my sugar would stop spiking and my body would start producing and using the correct amount of insulin. In like 9 or 10 months, I lost 50 lbs. I felt amazing! The best part is, after losing that weight and eating like the nutritionist told me, I haven’t tested Type 2 Diabetic since. I had completely reversed things on my own. But then the weight started creeping back up. I started to eat poorly again. While I was still able to stay out of the diabetic range on all my blood tests, I was not eating healthy at all. For the most part, I was a carbaholic. I ate all the things I knew I shouldn’t eat. And then I became fat again. I stayed that way for years.

Shortly after this last Christmas, I saw a picture of myself. I was mortified. I thought I looked good…but I didn’t. I was one of those, “well…at least she has a pretty face”. You know, the phrase every fat girl hates to hear. I started messaging Summer on Facebook and asking more questions about the Keto Diet Plan and finally on January 23, 2016, I was ready to jump in and give it a try.

This is a picture of me at my heaviest weight. To be honest, looking at it is really difficult.

What is the Keto Diet Plan?

Basically, it’s a diet where you eat high fat, moderate protein, and very low-carb. Your body stops using carbs to fuel it and switches to fat. In doing this, you start burning your fat stores. The weight starts melting off! I use My Fitness Pal to track everything. I pay for the premium service because I want my macros to be exact. So…I bet you are wondering how much weight I’ve lost…

As of today, I am down just over 57 lbs!! I look and feel amazing. I am down four pant sizes and five shirt sizes! Shopping is fun again! It’s so nice to be able to try anything and everything on at pretty much ANY store! The other day I was shopping for dresses for a wedding I have in July. You can see the progress I’ve made…

Don’t mind the crazy tan lines! We had my daughters soccer tournament all weekend long! Never in a million years would I ever try a dress on like this OR even consider getting it. I felt comfortable in the dress and I think I look pretty good!

Is the Keto Diet Plan Right for You?

My advice…do your research. Know what you are getting yourself into. I will tell you, it’s not as hard as it seems. Give yourself a couple weeks to get used to it. When you get into Dietary Ketosis (do NOT confuse this with Ketoacidosis…they are not the same thing), you will go through something referred to as the “Keto Flu”. Power through. Once in Ketosis…stay in it. You can check whether you are in Ketosis by using these Ketone Test Stripsketo diet plan I picked up on Amazon.

Keto Chicken Cordon Bleu Recipe

My husband and I have been following the Keto diet since January 23, 2016. We’ve lost quite a bit of weight, feel loads better (and look better too!), and we are eating way better food.One thing my family really likes is chicken. Just the other day I decided to make Keto Chicken Cordon Bleu for dinner. I was a bit unsure how it would turn out or if my family would even eat it. I quickly found that I had nothing to worry about. My daughter, who normally turns her nose up at things before trying it, took one bite and declared it delicious!

I’ve never made a traditional chicken cordon bleu recipe before, but I’ve eaten plenty and this, is a very easy Keto chicken cordon bleu recipe that also tastes amazing! And lets face it, with a hungry husband and two hungry kids, I want easy recipes! Lately I have been purchasing thin sliced boneless, skinless chicken breasts. They cook so much faster and I think they taste better. For this recipe, you will want to have those thin sliced chicken breasts. Trust me!

Keto Chicken Cordon Bleu Recipe

Ingredients

  • 4 Thin Sliced Chicken Breasts
  • 4 slices Ham Lunchmeat
  • 4 slices Swiss Cheese
  • 1 Egg
  • 1/2 cup Parmesan Cheese
  • Salt, Pepper and Garlic Powder, to taste

Directions

  1. Preheat your oven to 450 degrees. Place your baking sheet by placing your silicone baking sheetketo chicken on top. So easy!
  2. Place a piece of plastic wrap on a cutting board. Set your thin sliced chicken breasts on the plastic wrap and fold the plastic wrap over so it covers the chicken breasts and pound them even thinner.
  3. Beat your egg and pour it into a shallow bowl. Mix your Parmesan cheese and seasonings together in another shallow bowl.
  4. Flip your chicken breast over, add the ham and Swiss cheese and roll it up. *Tip…next time I will wrap the cheese IN the ham first and place that on the chicken. I think that will help keep the cheese in better.
  5. Holding the chicken breast together, dip it into the egg wash and then roll it in the Parmesan cheese mixture. Place it, seam side down, on your baking sheet. Repeat with the rest of the chicken breasts.
  6. Bake in the oven for 30 minutes.

What Did We Think?

This recipe will not disappoint! It is the best chicken cordon bleu recipe I have ever had!! I especially liked that it tasted good without mustard. I have a huge aversion to mustard and while I’ve eaten other chicken cordon bleu recipes, I’m always convinced I can taste the mustard (even when I really can’t). One of the nice things about the Keto diet is that casseroles and Keto go nicely together. I’ve seen a Pinterest chicken cordon bleu casserole that I have been dying to make. After seeing how well my family liked this chicken dish, I’m sure I will be able to get them to eat a baked chicken cordon bleu cassrole! I’ll be sure to write up the recipe after I make it and share it with you all.

Keto Creamed Spinach Recipe

When I decided to follow the Keto diet, I knew that I would be eating a lot of foods that I don’t normally eat. One of those foods is spinach. More specifically, cooked spinach. As I was researching different recipes, I came across a bunch of Keto Creamed Spinach recipes. After looking through them all, I put together my own recipe based on my husband and I’s own personal taste. It has become one of our favorite recipes and one that I make multiple times a month! I would even dare to say that it is very similar in taste to the Boston Market Creamed Spinach. No joke!

Keto Creamed Spinach Recipe

Ingredients

  • One pkg. Frozen Spinach (I believe it’s 283 grams)
  • 4 TBSP Cream Cheese
  • 1/2 cup Shredded Cheddar Cheese
  • Seasonings of your choice (we like salt and pepper)

Directions

  1. Place your frozen spinach into a sauce pan and heat over medium heat. You will want to cook this until the spinach is completely thawed and there isn’t a lot of water in the pan.
  2. Add your cream cheese and mix thoroughly.
  3. Add in your cheddar cheese and stir until it’s completely melted.
  4. Season and enjoy!

Not only is this an easy creamed spinach recipe, but it is, by far, the best creamed spinach recipe I’ve ever had! This particular recipe above serves 2, but it is one of those recipes that is easy to double or triple to serve more. Need a side dish for Easter? Try this Keto Creamed Spinach recipe. Vanilla Flavored Fat Bombs – Keto Diet

I’m like Oprah…I’ve tried every diet out there with very little success. Mostly because I wasn’t seeing much changing or it was too restrictive, which then brings out my rebellious side and I end up eating everything in site. The Keto diet is different. The first week I lost 7 lbs. Of course, the majority of that is water weight, but I’m into my second week now and I’m already down 1.5 lbs (and the week is not over yet). Switching gears and adding more fat into my diet is difficult, I’m not going to lie. But it’s so important to add the fat in. Since we are eating less carbohydrates, we need the fat to fuel our brain and body. Not to mention, food tastes so much better!

Benefits of the Keto Diet

Over the last, almost two weeks, I’ve noticed the following things since starting the Keto Diet:

  • Eating REAL foods
  • You’re satisfied with less food

Like I mentioned above, it’s sometimes hard to get fat in. When you’ve spent the vast majority of your life buying and eating low fat foods, suddenly abandoning that leaves you scrambling at the end of the day. That’s why I make these delicious vanilla flavored fat bombs to help make up the difference. Now while I am no longer craving sugar, these vanilla flavored fat bombs are just what I need every once in awhile.

Vanilla Fat Bombs

Yields 14 Fat Bombs|116 Calories|11.7 g Fat|1.2 g Protein|0.6 g Carbs

Ingredients

  • 8 oz. block of Cream Cheese (I use Walmart brand because it says gluten free on it)
  • 1/2 cup Unsalted Butter
  • 3/4 cup Splenda
  • 1/2 tsp Vanilla

Directions

  1. Set the cream cheese and the butter on the counter for awhile so it can warm up a bit.
  2. Place all ingredients in a large bowl and using a hand mixer, blend until smooth.
  3. Place wax paper over a baking sheet or cutting board. Using a spoon, scoop a small amount until the cutting board. Continue doing so until you’ve used up all of the mixture.

You can make these as big or as small as you would like. My recipe makes 14 fat bombs. I use My Fitness Pal to figure out the calories/fat/protein/carbs for this recipe. You will want to do that with the ingredients you use to insure you have the most accurate numbers.

OH. MY. GOSH. These are delicious! It’s like eating a little mini frozen cheesecake. After freezing them for about an hour or two, I store them in an airtight container in the freezer. I would imagine you could store them in the fridge once you’ve frozen them, but I’m telling you, they are so good frozen, I don’t even know that I care to try storing them in the fridge!
