Preheat your oven to 350 degrees. Set your cream cheese out to soften.
In a large bowl, add the butter, eggs, Swerve, softened cream cheese and the Greek yogurt. Mix thoroughly. Add in the lemon extract and vanilla extract and mix.
Add in the salt and baking powder, making sure to mix in between each addition. Finally mix in your GF four. Mix well.
Grease your mini muffin tin or use a silicone pan (trust me...this sticks to the paper) and fill each well. Bake for 15 minutes.
