Place the diced onion in a bowl of ice cold water and let sit for 10 minutes, then drain. Set aside and cover with a paper towel to absorb the excess water.*
Combine the remaining ingredients in mixing bowl and toss well.
Add the onion and stir to combine.
Taste and adjust the lemon juice and seasoning, as needed.
Cover and refrigerate until ready to serve. Toss well before serving.
*Place the onion in water to cut out the strong onion flavor. If you like that strong onion flavor, just skip that step.
