Gluten Free Brownies with White Chocolate Chips

Ingredients

  • 1/2 Cup Salted Butter melted
  • 1 TBSP Avocado Oil
  • 1/2 Cup White Sugar
  • 1 TBSP White Sugar
  • 1/2 Cup Brown Sugar packed
  • 1 TBSP Brown Sugar packed
  • 2 large Eggs
  • 2 tsp Vanilla Extract
  • 1/2 Cup Gluten Free Flour
  • 1/2 Cup Cocoa Powder
  • Pinch of Salt
  • 1 Bag White Chocolate Chips

Instructions

  1. Preheat your oven to 350°F. Grease an 8x8 pan with cooking spray and then line with parchment paper.

  2. Using your microwave, melt the butter completely. Add the melted butter, avocado oil, and all of sugars to your mixing bowl. Mix completely for about 1 minute. Next add your eggs and vanilla. Mix for another minute.

  3. Next add your gluten free flour (I like this brand a lot) and unsweetened cocoa powder to the bowl and mix with a spoon until it is just incorporated. It is important to not over mix. I have discovered that gluten free flour does not like to be over mixed!

  4. Gently fold in half the bag of white chocolate chips.

  5. Pour the gluten free brownie mix into the prepared pan. Top with the remaining white chocolate chips.

  6. Bake for 40-45 minutes. Allow your brownies to cool in the pan before cutting.
