Delicious recipe for gluten free Andes mint brownies.
Preheat your oven to 350°. Grease your 8x8 pan with cooking spray and line with parchment paper.
Using your microwave, melt the butter completely. Add the melted butter, avocado oil, and all of your sugars to your mixing bowl. Mix completely (about 1 minute). Next add your eggs and vanilla and mix for about one more minute.
Next add your gluten free flour (I like this brand a lot) and unsweetened cocoa powder. Mix this with a spoon until it is just incorporated. Do not over mix. Gluten free flour does not play well when it is over mixed!
Gently fold in your Andes mints.
Bake for 40-45 minutes (oven times vary). Allow your brownies to completely cool before frosting.
