For Meatballs

  • 1 lb Ground Venison
  • 1 large Egg
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Basil

For Soup

  • 8 Cups Chicken Broth
  • 1 1/2 Cup Spinach
  • 2 - 2 1/2 Cups Riced Cauliflower
  • 1 Med. Celery Stalk
  • 1/2 Cup Carrots
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • Salt to taste
  • Pepper to taste


  1. Mix the ingredients for the meatballs and set aside for a moment. Place the chicken broth and seasonings in a large stock pot and bring to a boil. 

  2. While waiting for the broth to boil, make your mini meatballs. I used about a tablespoon of ground venison for each meatball. 

  3. As your broth is beginning to boil, add the carrots, riced cauliflower and celery. Once the broth is at a full boil, add the meatballs one by one. Turn your heat down so it's a slow boil for 30 minutes. 

  4. Check to make sure your meatballs are done. Add the spinach and allow to cook for about 2-3 minutes longer.
