Delicious recipe for a low carb Italian wedding soup. It's Weight Watcher and Keto friendly.
Mix the ingredients for the meatballs and set aside for a moment. Place the chicken broth and seasonings in a large stock pot and bring to a boil.
While waiting for the broth to boil, make your mini meatballs. I used about a tablespoon of ground venison for each meatball.
As your broth is beginning to boil, add the carrots, riced cauliflower and celery. Once the broth is at a full boil, add the meatballs one by one. Turn your heat down so it's a slow boil for 30 minutes.
Check to make sure your meatballs are done. Add the spinach and allow to cook for about 2-3 minutes longer.
Makes 10 one cup servings.
