One of my favorite soups to eat is Italian wedding soup. Unfortunately, I found out, in my early 30’s, that I have a gluten allergy. So I haven’t had Italian wedding soup in a LONG time! Over the years, I have developed a low carb lifestyle. First, I did the Keto diet for about three years. However, due to issues out of my control, I can no longer follow the Keto lifestyle. So I am continuing my low carb eating, but with Weight Watchers (WW). I came up with this low carb Italian wedding soup recipe that is perfect on WW.

Ingredients

For Meatballs

1 lb Ground Venison
1 large Egg
1 tsp Garlic Powder
1 tsp Onion Powder
1/2 tsp Basil

For Soup

8 Cups Chicken Broth
1 1/2 Cup Spinach
2 - 2 1/2 Cups Riced Cauliflower
1 Med. Celery Stalk
1/2 Cup Carrots
2 tsp Garlic Powder
2 tsp Onion Powder
Salt to taste
Pepper to taste

Instructions

Mix the ingredients for the meatballs and set aside for a moment. Place the chicken broth and seasonings in a large stock pot and bring to a boil.
While waiting for the broth to boil, make your mini meatballs. I used about a tablespoon of ground venison for each meatball.
As your broth is beginning to boil, add the carrots, riced cauliflower and celery. Once the broth is at a full boil, add the meatballs one by one. Turn your heat down so it's a slow boil for 30 minutes.
Check to make sure your meatballs are done. Add the spinach and allow to cook for about 2-3 minutes longer.

Obviously, like any recipe, you will want to recheck with the specific ingredients you use.

I had quite a difficult time finding the cauliflower crumbles. My local Target store used to sell them. I wish they still did. The type of cauliflower crumbles they sold were slightly bigger pieces, which is what I really wanted for this recipe. However, I used what I could find. I would not use frozen cauliflower rice. It may be too mushy in the soup.
