Preheat your oven to 350°
In your oven safe or cast iron skillet, add your butter. Once your butter has melted, add the halved Brussels sprouts to the skillet and cook for about 10-15 minutes. You want to lightly brown the Brussels sprouts.
In a small bowl, add your heavy whipping cream, grated Parmesan cheese, and spices. Stir and pour over your Brussels sprouts.
Sprinkle the Colby Jack cheese and crumbled bacon on top and place in the oven for about 20 minutes.
