We are at the end of week two on Keto and I am so happy my husband and I decided to go back (and stick) to this lifestyle. Keto is truly a lifestyle change. When people talk about it with me, they always go back to, “wait…you don’t want to eat sugar ever again?” and my answer is, “no not really”. And I mean that. Sugar makes me feel terrible. Plus, the food on Keto is so delicious! These cheesy bacon Brussels sprouts are so good. My daughter even came home from soccer and chose to have those as her snack. I’m not even joking!

Cheesy Bacon Brussels Sprouts
Delicious Keto friendly recipe for cheesy bacon Brussels sprouts. Perfect low carb side dish.
- 5 Cups Brussels Sprouts halved
- 2 TBSP Salted Butter
- 2/3 Cup Heavy Whipping Cream
- 1 tsp Garlic Powder
- 1/2 tsp Paprika
- 1/2 tsp Salt
- Black Pepper to taste
- 1/4 Cup Grated Parmesan Cheese
- 1/2 Cup Colby Jack Cheese
- 1/2 Cup Crumbled Bacon
Preheat your oven to 350°
In your oven safe or cast iron skillet, add your butter. Once your butter has melted, add the halved Brussels sprouts to the skillet and cook for about 10-15 minutes. You want to lightly brown the Brussels sprouts.
In a small bowl, add your heavy whipping cream, grated Parmesan cheese, and spices. Stir and pour over your Brussels sprouts.
Sprinkle the Colby Jack cheese and crumbled bacon on top and place in the oven for about 20 minutes.
Macros - Fat: 14.4 g, Protein: 4.1 g. Carbs: 4.7 g

Cheesy Bacon Brussels Sprouts
Like I said, these are amazing! If you want it a little creamier, you can always add a little cream cheese or you can thicken the sauce a bit with cornstarch. I opted not to do that…mainly because I didn’t think it needed to be thickened, and I didn’t have cream cheese on hand when I made this. Next time I make it, may add some in and change up the cheeses a bit. This would be really good with whatever shredded cheese you have in your fridge!

Keto Friendly and Kid Friendly!
As I said earlier, my daughter, who had never had a Brussels sprout in her life, actually came home from soccer practice WANTING this as her snack. I was stunned. In fact, I think I posted a picture of her eating them on my Instagram stories! Not only are these cheesy bacon Brussels sprouts kid friendly, but they are also Keto friendly. For those of you following the Keto lifestyle, you know that fat is not a scary word to us. If you are not following Keto, don’t fret! Simply make this with a lower fat option! You do you!

Like I say in all of recipe posts, I will tell you the macros to give you an idea of where the recipe is at, but the most important thing is that you put the recipe in your own tracking app to figure out the macros with the specific ingredients you use.
