Delicious recipe for a Keto friendly ranch pepperoncini chicken. Full of flavor and absolutely healthy.
Preheat your oven to 350°. Spray your casserole dish with cooking spray, if you desire (I forgot and it still turned out OK).
Place your chicken breasts in your casserole dish. Sprinkle 2 TBSP of Ranch seasoning on top.
Next add your shredded mozzarella cheese (save a tiny bit). Drain your sliced pepperoncini peppers and sprinkle the peppers overtop of all of the chicken. Finally top with the remaining mozzarella cheese.
Bake in the oven for about 35 minutes (or until your chicken is cooked through. Before removing from the oven, turn your broiler on high and broil for about 4-5 minutes (be sure to watch this step so you don't end up burning the top of your dish.
