We have officially started football season in our house so that means my slow cooker is going to be getting a workout. Practice is five days a week (four days once school starts) and it’s during dinner time….so I need all the help I can get and the slow cooker definitely provides that! This cilantro lime chicken recipe is one that I haven’t made in years. I don’t know that the kids have ever had it. But boy did they both devour it tonight!!
Slow Cooker Chili Cilantro Lime Chicken
Ingredients
- One Whole Chicken (REMEMBER…remove the neck and giblet bag…)
- 1/2 cup Lime Juice (2 limes is just over a 1/2 a cup…but I used it all)
- 1 Whole Lime
- Fresh Cilantro (I used a little more than two handfuls)
- 3 tsp minced garlic
- 1 TBS Olive Oil
- 1 tsp Black Pepper
- 1 tsp Cayenne Pepper
- 1 heaping tsp Chili Powder
- 1/2 tsp Salt
Directions
-
- After pulling the nasty stuff out of the cavity of the chicken, rinse the chicken under cold water and pat dry.
- Mix all the dry ingredients together and rub it on the chicken (make sure to rub it inside the chicken too). Place the chicken inside the slow cooker.
- Put the lemon juice, garlic, cilantro and the olive oil in a blender or food processor (I used my Vitamix
). Blend until it is an even consistency.
- Using a knife, cut little slits into the whole lime and shove it inside the chicken.
- Pour the lemon juice mixture over the chicken and cook on low for about 7-8 hours (mine cooked for 8 hours and then shifted over to “keep warm” for about 25 mins).
It went from looking slightly Teenage Mutant Ninja Turtle like to something absolutely delicious!! Definitely give it a try!!!
It sounds tasty. And I bet it goes well with pretty much any side dish. Thanks for the recipe.
It does sort of look mutant before cooking, but sounds mighty yummy.
That picture on the left is funny, but the one on the right looks delicious!
Oh that sounds good. I bet it would be yummy shredded over a salad.
I bet it would be to! I’ll have to try that!!
OK it looks a bit wild, but one thing I have long since learned is that looks do NOT equal taste!! Glad it was delicious!
