We have officially started football season in our house so that means my slow cooker is going to be getting a workout. Â Practice is five days a week (four days once school starts) and it’s during dinner time….so I need all the help I can get and the slow cooker definitely provides that! This cilantro lime chicken recipe is one that I haven’t made in years. Â I don’t know that the kids have ever had it. Â But boy did they both devour it tonight!!
Slow Cooker Chili Cilantro Lime Chicken
Ingredients
- One Whole Chicken (REMEMBER…remove the neck and giblet bag…)
- 1/2 cup Lime Juice (2 limes is just over a 1/2 a cup…but I used it all)
- 1 Whole Lime
- Fresh Cilantro (I used a little more than two handfuls)
- 3 tsp minced garlic
- 1 TBS Olive Oil
- 1 tsp Black Pepper
- 1 tsp Cayenne Pepper
- 1 heaping tsp Chili Powder
- 1/2 tsp Salt
Directions

- After pulling the nasty stuff out of the cavity of the chicken, rinse the chicken under cold water and pat dry.
- Mix all the dry ingredients together and rub it on the chicken (make sure to rub it inside the chicken too). Â Place the chicken inside the slow cooker.
- Put the lemon juice, garlic, cilantro and the olive oil in a blender or food processor (I used my Vitamix).  Blend until it is an even consistency.
- Using a knife, cut little slits into the whole lime and shove it inside the chicken.
- Pour the lemon juice mixture over the chicken and cook on low for about 7-8 hours (mine cooked for 8 hours and then shifted over to “keep warm” for about 25 mins).
It went from looking slightly Teenage Mutant Ninja Turtle like to something absolutely delicious!! Definitely give it a try!!!
