Spicy Turkey Chili – WW Recipe

Since switching from Keto to Weight Watchers, one of the things I’ve been excited about is all the different soups. On Keto, the main soup I made (and it’s super good) was chorizo chicken soup. On Weight Watchers, I have a ton of different soups to make. I like soups because you are able to freeze them. With knee surgery coming up in less than two weeks, filling the freezer has been my main goal. This spicy turkey chili recipe is a perfect addition. And, best of all, it’s only one point on Weight Watchers!

Spicy Turkey Chili

Delicious Weight Watcher friendly recipe for spicy turkey chili. Just 1 Freestyle point!

Ingredients

  • 2 lbs Extra Lean Ground Turkey
  • 15 1/2 oz Red Beans drain and rinse
  • 15 1/2 oz Pinto Beans drain and rinse
  • 1 small Onion diced
  • 1 medium Green Pepper diced
  • 28 oz Diced Tomatoes with Green Chilies
  • 5.5 oz Tomato Paste
  • 2 to 3 Cups Chicken Broth
  • 1/4 Cup Franks Red Hot Sauce
  • 1 TBSP Chili Powder
  • 1 tsp Minced Garlic
  • 1 tsp Red Pepper Flakes
  • 1 tsp Cumin
  • 2 tsp Oregano
  • 2 Bay Leaves

Instructions

  1. Brown your extra lean ground turkey. Drain the oil and place the cooked ground turkey in your stock pot. 

  2. Dice your green pepper and onion and place in the pot.

  3. Add the beans, tomatoes, tomato paste, chicken broth, Franks Red Hot and seasonings to the pot and stir. 

  4. Bring your spicy turkey chili to a boil and then lower the heat to low and cover with a lid. Simmer for about 2 hours, or until your onions and green peppers are tender. 

Delicious Spicy Turkey Chili

This spicy turkey chili is so good! I made this yesterday and actually had a bowl of it this morning for breakfast! Now remember, if you are following Weight Watchers, you must use the extra lean (99%/1%) ground turkey for it to be so low in points. The only thing in this recipe that adds points is the tomato paste. Be sure to scan all of your ingredients and put it in your recipe builder yourself. Some of the beans I scanned at the store were NOT 0 points. The beans that were not zero points had sugar as one of the ingredients. Be sure to look for that.

Freezer Friendly Recipe!

Like I mentioned above, I am having surgery in less than two weeks. I am making sure to stock my freezer to make things easier. This recipe works perfectly as a freezer recipe! Low Carb Italian Wedding Soup Recipe

One of my favorite soups to eat is Italian wedding soup. Unfortunately, I found out, in my early 30’s, that I have a gluten allergy. So I haven’t had Italian wedding soup in a LONG time! Over the years, I have developed a low carb lifestyle. First, I did the Keto diet for about three years. However, due to issues out of my control, I can no longer follow the Keto lifestyle. So I am continuing my low carb eating, but with Weight Watchers (WW). I came up with this low carb Italian wedding soup recipe that is perfect on WW.

Low Carb Italian Wedding Soup

Ingredients

For Meatballs

  • 1 lb Ground Venison
  • 1 large Egg
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Basil

For Soup

  • 8 Cups Chicken Broth
  • 1 1/2 Cup Spinach
  • 2 - 2 1/2 Cups Riced Cauliflower
  • 1 Med. Celery Stalk
  • 1/2 Cup Carrots
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Mix the ingredients for the meatballs and set aside for a moment. Place the chicken broth and seasonings in a large stock pot and bring to a boil. 

  2. While waiting for the broth to boil, make your mini meatballs. I used about a tablespoon of ground venison for each meatball. 

  3. As your broth is beginning to boil, add the carrots, riced cauliflower and celery. Once the broth is at a full boil, add the meatballs one by one. Turn your heat down so it's a slow boil for 30 minutes. 

  4. Check to make sure your meatballs are done. Add the spinach and allow to cook for about 2-3 minutes longer.

I had quite a difficult time finding the cauliflower crumbles. My local Target store used to sell them. I wish they still did. The type of cauliflower crumbles they sold were slightly bigger pieces, which is what I really wanted for this recipe. However, I used what I could find. I would not use frozen cauliflower rice. It may be too mushy in the soup.

Chicken Enchilada Soup Recipe

I’m probably going to say this a million times in this post, but this chicken enchilada soup is amazing. It’s filling too. I’m not sure where you live, but here in Michigan, it feels like winter. With the windchill, it was 24 degrees today. So total soup weather. This chicken enchilada soup is filling and the best part is, if you are following Weight Watchers (WW), it is zero SmartPoints for one serving.

Chicken Enchilada Soup

Ingredients

  • 1 lb Boneless, Skinless Chicken Breast
  • 10 oz Old El Paso Enchilada Sauce, Hot
  • 11 oz Canned Corn
  • 4 1/2 oz Old El Paso Green Chilies, mild, chopped
  • 29 oz No Salt Added Diced Tomatoes (2 14.5 oz cans)
  • 15 oz Black Beans drained and rinsed
  • 1 med Onion chopped
  • 1 1/2 tsp Minced Garlic
  • 3 tsp Taco Seasoning
  • 1 cup Fat Free Chicken Broth
  • 1 cup Plain Fat Free Greek Yogurt

Instructions

  1. You have the option of using either the stovetop or your slow cooker. Place your chicken breasts (raw) in the slow cooker or stock pot.

  2. Add ALL of the other ingredients, but the plain fat free Greek yogurt. Stir.

  3. If you are using the stovetop, bring your soup to a slow boil and then turn on low. I used the "simmer select" option on my stove. Allow it to simmer for about 65 minutes. 

    If you are using your slow cooker, cook on high for 4 hours or low for about 8 hours.

  4. Check to make sure your chicken is cooked. Remove the chicken from the stock pot or slow cooker and shred. Add it back to the pot/slow cooker.

  5. Stir in your plain fat free Greek yogurt and serve immediately.

*Each serving is 1 cup.

You guys…it’s so good. I was texting my cousin and she asked me if I thought it would be good without the greek yogurt (she likes more brothy type soups). To be honest, it was good, and I would eat it either way, but it was WAY better with the Greek yogurt. If you are thinking, “ew, I don’t want to use Greek yogurt”, I think you could totally use heavy whipping cream. I use that in my Chorizo Chicken Soup Recipe and it’s amazing too.

This Chicken Enchilada Soup is 0 pts on WW

For my Weight Watchers people, this chicken enchilada soup is 0 SmartPoints for 1 serving. With that said, if you choose to eat 2 servings (so 2 cups), and I can’t blame you…it’s that good, then it is 1 point. So technically, this recipe works out to 1/2 a point. But even at 1 point for 2 cups, that’s a good deal! This soup is super filling!

This chicken enchilada soup is definitely a recipe that you want to keep the ingredients on hand. I made it today and everyone in my house had a bowl of it and there is not much left. That makes me very sad! I think what I will do next time is double the recipe and freeze some of it. This is an excellent freezer soup recipe!

Lemon Pound Cake Mini Muffins

Since starting Weight Watchers (WW), I have become obsessed with finding WW friendly solutions for all of my favorite things. Lemon Pound Cake Mini Muffins

Ingredients

  • 8 large Eggs
  • 1 1/2 Cups Swerve Confectioners Sugar
  • 1/4 Cup Plain, Fat-Free Greek Yogurt
  • 1/4 Cup Salted Butter softened
  • 8 oz Fat Free Cream Cheese softened
  • 1 tsp Vanilla
  • 1 1/2 tsp Lemon Extract
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 2 1/2 Cups GF Flour can use reg. flour

Instructions

  1. Preheat your oven to 350 degrees. Set your cream cheese out to soften.

  2. In a large bowl, add the butter, eggs, Swerve, softened cream cheese and the Greek yogurt. Mix thoroughly. Add in the lemon extract and vanilla extract and mix. 

  3. Add in the salt and baking powder, making sure to mix in between each addition. Finally mix in your GF four. Mix well. 

  4. Grease your mini muffin tin or use a silicone pan (trust me...this sticks to the paper) and fill each well. Bake for 15 minutes.

While I made these lemon pound cake mini muffins with gluten free flourlemon pound cake, you can totally sub in your favorite non-gluten free flour. I’ve tried a bunch of different sugar alternatives and I have to say, Swerve is the first alternative sugar that actually tastes like sugar! If you would prefer to use regular sugar, be sure to recalculate the Weight Watchers SmartPoints in your app.

Recipe Tips and Tricks

My first two pieces of advice are super important and if you follow it, you will love me each and every time you make muffins. You will want to get these batter spoonslemon pound cake and this silicone mini muffin panlemon pound cake. The batter spoons allow you to fill the muffin wells with the exact amount of batter needed. This silicone mini muffin pan is AMAZING. It is the best silicone pan. It has a metal frame for support.

As for the actual recipe, I had a little trouble with the cream cheese. I don’t know if I let it soften long enough. When I make this recipe again, I will try beating the cream cheese first with the mixer and then adding the other ingredients and see if that makes a difference. Despite the tiny random specks of cream cheese, these lemon pound cake mini muffins are good!

Cheesy Jalapeno Stuffed Chicken – WW Recipe

We eat a lot of chicken in our house. I am always trying to find new ways to make it. Both my husband and I like spicy foods so I decided to make a cheesy jalapeno stuffed chicken breast. Well…correction, my husband made it. I had knee surgery yesterday and totally forgot to cook the chicken before the surgery. So, being the good guy that he is, he not only made the chicken, BUT he also took pictures for me too!

Cheesy Jalapeno Stuffed Chicken Breast

Delicious recipe for a cheesy jalapeno stuffed chicken breast. WW friendly recipe at just 2 points!

Ingredients

  • 3 Chicken Breasts pound slightly thinner
  • 3 small Jalapeno Peppers sliced in half; hollowed out
  • 3/8 cup Shredded Colby Jack Cheese divided
  • 6 Pepper Seasoning to taste

Instructions

  1. Preheat your oven to 350 degrees. Prepare your baking pan. I like to use this baking mat. It keeps the chicken up and gives it a nice crisp!

  2. Slightly pound your chicken a bit thinner and then slice the chicken open, leaving one side intact. 

  3. Slice your jalapeno peppers in half and hollow them out. Place half of the pepper in the chicken and cover with 1/8 cup shredded cheese. Set the other half of the pepper on top and close the chicken and secure with toothpicks (I use metal toothpicks. If you use wooden ones, soak in water first).

  4. Bake for about 40 minutes. Make sure you cook your chicken to an internal temp of 165 degrees.

I highly recommend that baking mat. The chicken cooks so much better on it and those little triangles keep the chicken up so that it’s not just sitting in it’s own juices while it cooks. The price for that mat is a really good one too!

As you can see from the picture, my husband easily closed the chicken with one metal toothpick. If I were making this, I would have flipped the chicken halfway through, but he didn’t and it tasted just fine! I didn’t eat more than a few bites last night since I figured a giant, spicy chicken breast, was probably not the best thing to eat right after surgery! But it was really delicious and I can’t wait to eat it tonight!

It’s WW Friendly!

We used regular shredded cheese. So in doing that, it made this chicken dish 2 points. If you like, you could try using low fat or fat free shredded cheese and the points may go down. I, personally, prefer the taste of regular cheese and plan to just account for that. It’s totally up to you with what you choose to do. Either way, this is a very low point WW recipe!
