We LOVE apricots in our house! When my husband gets a chance, he goes to a Middle Eastern grocery store near us and picks up these apricot sheets…I’m sure they have an official name, but that’s what I call them. They are like a ginormous apricot fruit roll-up. So good! Not too long ago, I noticed the grocery store was stocking apricots in their produce department. I picked up a few for the kids and they devoured them!
After a very sleepless night, thanks to Mother Nature, I decided to bake something. I wasn’t sure what I wanted to make, but I had a jar of apricot preserves on my pantry shelf and I knew I wanted to use that. After going through my recipe cards, I decided to make an Apricot Oatmeal Cobbler!
Apricot Oatmeal Cobbler
Ingredients
- 1 cup Flour
- 1 cup Oats
- 1 cup Brown Sugar, packed
- 1 tsp Baking Powder
- 1/2 tsp salt
- 1 1/2 sticks butter, cut up
- About 12 ounces Apricot Preserves
Directions
- Preheat the oven to 350°. Grease an 8 x 8 pan with butter.
- Place all of the ingredients into a bowl. Wash your hands and start mixing the butter and dry ingredients together until it’s completely mixed.
- Spread part of the mixture on the bottom of the 8 x 8 pan. Spread the apricot preserves over top and place the remaining amount of the mixture over top and bake for 40 minutes or until it is slightly browned on top.
This Apricot Oatmeal Cobbler recipe is delicious by itself, but it would also be great if served with a scoop of vanilla ice cream! The nice thing about this Apricot Oatmeal Cobbler recipe is that you can change the recipe to fit your taste! Don’t care for apricot preserves? Not a problem! Substitute strawberry preserves or whatever kind of preserves you like!

I’ve heard of cobbler using oatmeal, but I’ve never heard of using preserves before. This looks really good.
