I’m like Oprah…I’ve tried every diet out there with very little success. Mostly because I wasn’t seeing much changing or it was too restrictive, which then brings out my rebellious side and I end up eating everything in site. The Keto diet is different. The first week I lost 7 lbs. Of course, the majority of that is water weight, but I’m into my second week now and I’m already down 1.5 lbs (and the week is not over yet). Switching gears and adding more fat into my diet is difficult, I’m not going to lie. But it’s so important to add the fat in. Since we are eating less carbohydrates, we need the fat to fuel our brain and body. Not to mention, food tastes so much better!

Benefits of the Keto Diet
Over the last, almost two weeks, I’ve noticed the following things since starting the Keto Diet:
- Eating REAL foods
- You’re satisfied with less food
- Sugar cravings are completely gone
- Diet Coke craving is completely gone
- Sleeping better than ever
- Mood is better
Like I mentioned above, it’s sometimes hard to get fat in. When you’ve spent the vast majority of your life buying and eating low fat foods, suddenly abandoning that leaves you scrambling at the end of the day. That’s why I make these delicious vanilla flavored fat bombs to help make up the difference. Now while I am no longer craving sugar, these vanilla flavored fat bombs are just what I need every once in awhile.
Vanilla Fat Bombs
Yields 14 Fat Bombs|116 Calories|11.7 g Fat|1.2 g Protein|0.6 g Carbs
Ingredients
- 8 oz. block of Cream Cheese (I use Walmart brand because it says gluten free on it)
- 1/2 cup Unsalted Butter
- 3/4 cup Splenda
- 1/2 tsp Vanilla
Directions
- Set the cream cheese and the butter on the counter for awhile so it can warm up a bit.
- Place all ingredients in a large bowl and using a hand mixer, blend until smooth.
- Place wax paper over a baking sheet or cutting board. Using a spoon, scoop a small amount until the cutting board. Continue doing so until you’ve used up all of the mixture.
You can make these as big or as small as you would like. My recipe makes 14 fat bombs. I use My Fitness Pal to figure out the calories/fat/protein/carbs for this recipe. You will want to do that with the ingredients you use to insure you have the most accurate numbers.
OH. MY. GOSH. These are delicious! It’s like eating a little mini frozen cheesecake. After freezing them for about an hour or two, I store them in an airtight container in the freezer. I would imagine you could store them in the fridge once you’ve frozen them, but I’m telling you, they are so good frozen, I don’t even know that I care to try storing them in the fridge!

I have NO problem eating fat, but it’s certainly not the kind of fatty foods that would be on this diet, lol!! Way to go on all your progress, it’s so awesome you’ve found something that works well for your life! What a cool recipe, I like the creative way you’ve made it like a cheesecake. Interesting idea. I could definitely eat the cream cheese, just with less sugar and fake sugar. I personally have never “dieted.” I aim to eat a healthy, balanced diet with plenty of veggies, fruit, whole grains, and lean protein. Breastfeeding also helped me lose all my baby weight (and then some, ack!) after I had my two kiddos.
