Fall is officially here. We are in the full swing of school, sports and crazy schedules. I would love to say I am awesome at always getting dinner on the table, but I’m not. Using a slow cooker is something I have relied on a lot in the past. For some reason, I stopped using it. That all changed last week when I made this super amazing Keto beef carnitas recipe. My kids devoured it!

Keto Beef Carnitas
Delicious slow cooker recipe for Keto beef carnitas.
Ingredients
- 3 lb Chuck Roast
- 3/4 Cup Beef broth
- 1 TBSP Extra Virgin Olive Oil
- 2 TBSP Franks Red Hot Sauce
- 4 oz Canned Green Chilis
- 1 1/2 TBSP Minced Garlic
- 2 tsp Chili Powder
- 1/2 tsp Salt
- 1 tsp Ground Black Pepper
- 1/2 tsp Paprika
- 1 tsp Cumin
- 1/2 Small Onion chopped
Instructions

Place the Franks Red Hot sauce and beef broth in the slow cooker and turn it on to preheat it while you prepare the chuck roast.

Put all of your seasonings in a small bowl and set aside. Rub the olive oil on both sides of the chuck roast. Next, rub the seasonings all over the roast.

Place your seasoned chuck roast in the crock pot. Put the minced garlic, chopped onion and green chilis on top of the chuck roast.

Turn your slow cooker on high and cook for 5 hours.

Shred the chuck roast and place it back into the juice to serve.
Recipe Notes
*If there is too much juice, you can always thicken it by placing everything in a sauce pan and simmer for as long as you need to.
Keto Beef Carnitas
Like I said, these are the best beef carnitas I have ever had. My kids at theirs on soft tortilla shells. My husband and I tried making cheese tortilla shells. They didn’t quite turn out the way we had envisioned, but rather than eat them like tacos, we ate them like tostadas.
What to Top Your Keto Beef Carnitas With
I’m rather plain Jane when it comes to toppings for things like this. So I ate mine like the picture above. We had some left over Taco Bell hot sauce packets (they always give you WAY more than you need), so my husband used those packets, plus avocado and sour cream. He declared this one of his favorite meals. My kids have already asked me when I am going to make this again! The nice thing is I was able to get this all together in the morning and just leave it.
How many Carbs?
Normally when I do a Keto recipe, I like to post a picture from my carb counter app. Unfortunately, the app is not working for me right now. I think it needs an update, as it just keeps closing! At any rate, I had texted my husband the carb count for this recipe so he could track it. For just the Keto beef carnitas, there are only 2 carbs! Obviously, you will need to add in whatever toppings you choose to put on it!
