I don’t eat Chinese food very often because I have a hard time trusting that they won’t use soy sauce in my food. Can you tell I had a bad experience? One thing I absolutely love are egg rolls. I’ve never found a place that made a gluten free egg roll. So I made my own. The best thing about this recipe is that I can customize it myself, using whatever protein I choose! If you follow the Weight Watchers plan, then this recipe is 0 points on the Purple Plan! Probably 0 points on blue, as well, but I am on Purple so I only know that one for sure!

Serve with gluten free wraps, romaine lettuce leaves, or just eat it in a bowl!
Gluten Free Egg Roll in a Bowl
This is probably my all time favorite Weight Watchers friendly recipe I have ever made. I totally just planned on eating it in a bowl, but we had some leftover gluten free tortilla wraps and this was excellent in a gluten free spinach wrap! Next time I make it, I want to make sure we have some romaine lettuce leaves. This totally reminded me of that lettuce wrap appetizer at P.F. Changs!

What If I am Not Gluten Free?
If you are not gluten free, simply replace the Tamari sauce with your favorite soy sauce! The rest of the recipe stays the same. You can also use Coconut Aminos, if you wanted to. I’ve cooked with that before too. The recipe should still taste pretty much the same!

Other Protein Ideas
I chose to use the 99% fat free ground turkey because on the Purple Plan on Weight Watchers, it is zero points. However, you can use whatever protein you would like. My cousin made it with chunks of chicken. That will be my next way I make it! I bet it is a little more filling that way! Don’t eat meat? No problem! You can totally use a meatless option in this recipe too! If you like to meal prep, this would be an excellent recipe to make at the beginning of the week and divide out for some lunches or dinners!
