My husband and I made the decision to go back to the Keto lifestyle. After having three surgeries in a little over a years time, and giving Weight Watchers a try, we were just not happy with how we were feeling. The first time we did Keto, I lost 90 lbs and my husband lost 125 lbs. However, better than the weight loss, was our overall feeling from head to toe. I wanted to feel like that again. One week into Keto and I lost 8.2 lbs. Yes, I am sure most of that is water weight, but I’m OK with that! Since we are eating all of our meals at home, I have been cooking A TON! Last night I made this spicy butter chicken recipe and it was winner!

One of the things I started doing during this whole Covid, stay at home time, was cook more than I usually do. I like to look at a bunch of recipes and make a few changes to suit our tastes. That’s exactly what I did with this spicy butter chicken. I half expected the kids to turn their noses up and tell me they weren’t eating it because it had cooked broccoli in it. Not only did they eat it, BUT they also asked for seconds on…THE BROCCOLI. I’m not even joking!
Spicy Butter Chicken Recipe
Keto friendly recipe for spicy butter chicken.
Ingredients
Chicken Seasoning
- 3 lbs Boneless, Skinless Chicken Breasts bite size pieces
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1/2 tsp Black Pepper
- 1/4 tsp Salt
Butter Sauce
- 1 tsp Avocado Oil
- 1/2 Cup Salted Butter divided
- 1/2 Cup Fat Free Chicken Broth
- 2 tsp Jarred Minced Garlic
- 2 TBSP Lemon Juice
- 1 tsp Oregano
- 1 1/2 TBSP Sriracha Sauce
- Frozen vegetable of choice
Instructions

Cut your chicken breasts into bite size pieces. Place in a large bowl and add your salt, pepper, onion powder, and garlic powder. Toss to coat the chicken evenly.

In your cast iron or large skillet, melt 1/4 cup of butter and the tsp of avocado oil. Make sure you have your stove on medium low heat. You do not want to burn your butter.

Thoroughly cook your bite sizes pieces of chicken in your skillet, browning each side. Add 1 tsp of the jarred minced garlic and your oregano. Cook for about 30 seconds or 1 minute longer and then remove from your skillet and set aside.

Next you need to add your remaining 1 tsp of jarred minced garlic and the chicken broth to your skillet. Increase the temperature slightly. Now add the remaining 1/4 cup butter, lemon juice, and sriracha.

Add your frozen vegetables of choice. I had broccoli on hand so I went with that. Cook until it is heated through. Add the chicken back in and cook for a about a minute or so, making sure the chicken gets coated nicely with the sauce.

Spicy Butter Chicken
You guys…this dish turned out amazing. I literally could have sat there and eaten the entire thing. And like I said earlier, the kids loved the broccoli in it. I think this was the first time they willingly ate broccoli that was cooked. Not only did they eat it, but they went back for seconds. In fact, as I type this, my family is arguing over who can eat the leftovers today for lunch!

Keto Macros
When I figured out the macros for this recipe, I did so using My Fitness Pal. It’s the app I’ve had the most success with when doing the Keto diet. I did not include the broccoli in the recipe, as I know I will be making this with whatever vegetable I have on had (cauliflower, whole green beens, etc). You can find the Macros listed in the notes section of the recipe. However, with that said, as always, be sure to put the recipe in your own Keto tracking app to figure out the macros with the specific ingredients you use.
