My family has gotten WAY too used to me cooking and baking during this Covid-19 stay home order. Last week I made some delicious white chocolate brownies that everyone in the house devoured. When I made my weekly grocery run for more produce and meat, I picked up a package of chopped up Andes Mints. I had the idea that I would make Andes mint brownies. I made those this past weekend and they were a huge hit. In fact, I would have to say, they are probably the best brownie, if not the best baked good, I have ever made. Seriously.

Andes Mint Brownies - Gluten Free
Delicious recipe for gluten free Andes mint brownies.
Ingredients
- 1/2 Cup Butter melted
- 1 TBSP Avocado Oil
- 1/2 Cup White Sugar
- 1 TBSP White sugar
- 1/2 Cup Brown Sugar packed
- 1 TBSP Brown Sugar packed
- 2 large Eggs
- 2 tsp Vanilla Extract
- 1/2 Cup Gluten Free Flour
- 1/2 Cup Cocoa Powder
- Pinch of Salt
- 1/2 Cup Chopped Andes Mints
Instructions

Preheat your oven to 350°. Grease your 8x8 pan with cooking spray and line with parchment paper.

Using your microwave, melt the butter completely. Add the melted butter, avocado oil, and all of your sugars to your mixing bowl. Mix completely (about 1 minute). Next add your eggs and vanilla and mix for about one more minute.

Next add your gluten free flour (I like this brand a lot) and unsweetened cocoa powder. Mix this with a spoon until it is just incorporated. Do not over mix. Gluten free flour does not play well when it is over mixed!

Gently fold in your Andes mints.

Bake for 40-45 minutes (oven times vary). Allow your brownies to completely cool before frosting.
Andes Mint Brownies
Don’t these brownies sound delicious?!? The thing I liked the most about them is the mint chips actually melted while baking. It was excellent. I kind of expected them to be hard pieces like the white chocolate chips were last week. So this was a nice surprise! Like every other gluten free recipe on this site, feel free to make them with regular flour if you don’t follow a gluten free diet. The measurements are still the same.

To Frost or Not to Frost
I almost didn’t frost these Andes mint brownies. Part of the reason was that I didn’t want them to be too sweet. The other part was I was being lazy. However, in the end, my husband talked me into making some buttercream frosting to put on them. I couldn’t find my normal buttercream frosting recipe, so I did a quick Google search, found one that had a high rating and made that. It was pretty good (my normal go to that my mother in-law gave me is better!). All in all, while I was initially going to just sprinkle powdered sugar on top, making the choice to frost them and sprinkle a few Andes mints on top, was the right choice (don’t tell my husband he was right…he will get a big head)!
