While I did not have the 4th of July celebration that I thought I was going to have, I did make a pretty darn good cake for everyone else! If you don’t know what I am talking about, go back and read about how sick I was and what the ER doctors said. I knew I wanted to do a classic 4th of July dessert. 4th of July themed cookies was one idea I had, but I have never been good at decorating cookies. Even though I watch every decorating video I come across! A flag themed 4th of July cake was my next idea, and the one I went with!

The 4th of July Cake
This is the cake I decided to make. For the cake part, I bought a lemon flavored cake mix at the store. Buy your favorite flavor. If you need gluten free, get that! Just follow the directions on the box for the cake. Use a 13×9 cake pan and be sure to grease it well. My favorite is Baker’s Joy baking spray. Just be aware, it has flour, so if you have a gluten allergy, use something else for your 4th of July cake.
Frosting for your 4th of July Cake
The frosting for this cake is so easy! I used a dairy free butter and vanilla flavored soy milk. Feel free to use regular milk or whatever alternate milk you choose.
Frosting
1 cup granulated sugar
1/2 cup shortening
1 stick butter
2/3 cup milk
3 TBS flour
1. Beat the granulated sugar, shortening and butter together until creamy (takes a LONG time).
2. Warm the milk in the microwave to just more than room temperature. The warmer, the better…but not hot.
3. Add a little bit of flour to the mixture and beat. Then add some milk and beat. Alternate until the sugar is dissolved.
I made the cake the day before and frosted it the day of the party. One thing I would have done differently is to cut the strawberry halves in half again. They were too large and I was unable to make the cake an authentic flag with the appropriate amount of stripes.
