Adding Fiber to Your Diet

You’ve probably heard that it is very good for your health to add fiber to your diet. According to the Mayo Clinic:

“Dietary fiber — found mainly in fruits, vegetables, whole grains and legumes — is probably best known for its ability to prevent or relieve constipation. But fiber can provide other health benefits as well, such as lowering your risk of diabetes and heart disease.”

I recently read about a good way to add a little extra fiber. Buy the original Fiber One cereal and crush it in a blender. When you want to bread chicken or pork, bread it using the fiber one. Thats what I did tonight. I dipped the chicken in fat free Catalina dressing and then dipped it in the crushed Fiber One . I added a few other seasonings to the Fiber One, as well.

Baked it in the oven at 375 degrees for 45 mins. It was soooo good! Even my son, king of picky eaters, devoured it!
