This past Tuesday was my husbands birthday. His favorite dessert (besides rice pudding) is lemon bars. I didn’t want to make the traditional lemon bar recipe so I decided to make them similar to brownies, but without the chocolate. They were a HUGE hit! In fact, everyone liked them so much that I will be making them again at Easter!
Not Your Traditional Lemon Bars
Ingredients:
- 1 1/2 cups Flour
- 1 1/2 cups Granulated Sugar
- 1/2 tsp Salt
- 2 Sticks of Unsalted Butter, softened
- 4 Eggs
- 2 TBS Lemon Juice
- 2 tsp Lemon Zest (I use the stuff in the jar)
Glaze:
- 1 cup Powdered Sugar
- 2 TBS Lemon Juice
- Lemon Zest (to sprinkle on top)
Directions:
- Preheat the oven to 350 degrees and prepare a 9×13 pan (make sure to get the corners well).
- Combine the sugar, flour and salt in a large bowl and mix in the softened butter. Mix well.
- In a separate bowl, whisk the eggs with the lemon juice and lemon zest.
- Add the wet ingredients to the large bowl and mix well.
- Pour into the prepared 9×13 pan and bake for 28-30 minutes.
- Remove from the oven and let cool.
- Once cool, mix the powdered sugar and lemon juice and pour over the lemon bars. Sprinkle with lemon Zest.
- Once hardened, cut into desired size.
