Not Your Traditional Lemon Bars!

This past Tuesday was my  husbands birthday.  His favorite dessert (besides rice pudding) is lemon bars.  I didn’t want to make the traditional lemon bar recipe so I decided to make them similar to brownies, but without the chocolate.  They were a HUGE hit!  In fact, everyone liked them so much that I will be making them again at Easter!

Not Your Traditional Lemon Bars

Ingredients:

  • 1 1/2 cups Flour
  • 1 1/2 cups Granulated Sugar
  • 1/2 tsp Salt
  • 2 Sticks of Unsalted Butter, softened 
  • 4 Eggs
  • 2 TBS Lemon Juice
  • 2 tsp Lemon Zest (I use the stuff in the jar)

Glaze:

  • 1 cup Powdered Sugar
  • 2 TBS Lemon Juice
  • Lemon Zest (to sprinkle on top)

Directions:

  1. Preheat the oven to 350 degrees and prepare a 9×13 pan  (make sure to get the corners well).
  2. Combine the sugar, flour and salt in a large bowl and mix in the softened butter.  Mix well.
  3. In a separate bowl, whisk the eggs with the lemon juice and lemon zest.
  4. Add the wet ingredients to the large bowl and mix well.
  5. Pour into the prepared 9×13 pan and bake for 28-30 minutes.
  6. Remove from the oven and let cool.
  7. Once cool, mix the powdered sugar and lemon juice and pour over the lemon bars.  Sprinkle with lemon Zest.
  8. Once hardened, cut into desired size.

I’m telling you, these are the BEST lemon bars ever.  I think this summer I will try this recipe, but use lime juice instead and make Key Lime bars!  Or maybe use 1 TBS lemon juice and 1 TBS lime juice and make Lemon-Lime Bars!  Enjoy!
