How to Make a Box Cake Taste Homemade!

For Easter this year, I made cupcakes for the kids.  My mom was bringing a chocolate mousse cheesecake and I knew the kids wouldn’t like that.  While browsing Pinterest, I found a tip on how to make a box cake mix taste just like homemade from scratch.  I would link you to the original site, however when you click to get the original site, it’s not what it’s supposed to be. Also, make sure you read all the way to the end to find the link to my favorite 3-tier cupcake carrier. Makes taking cupcakes to events so much easier!

How to Dress Up Your Box Cake Recipe

First, you want to start out with the box mix of your choice.  For these cupcakes, I chose Funfetti…can’t go wrong with Funfetti!  Pour the box mix into a mixing bowl.

Next, you want to add one (1) extra egg than what the box calls for.

Instead of oil, add the same amount of melted, real butter.

And finally, instead of using water, you use milk.  I used 1% milk.

After baking the cupcakes according to the box directions, allow them to cool and frost them with your choice of frosting.  I have a really good recipe for buttercream frosting, but I decided to make things easy and I bought frosting in the spray can.  If you haven’t used that before…try it!  It’s quick and easy and very inexpensive!

So…did they taste homemade?  They sure did!  I don’t know that I would make cupcakes like this all of the time.  I mean, let’s face it…four eggs, real butter…that’s a whole lot of fat and calories.  But then again…it is a cupcake and if I’m choosing to eat a cupcake (which is obviously not on my diet), it might as well be good!

If you find yourself baking cupcakes quite a bit for events like school birthdays, bake sales, parties, etc. you definitely want this awesome 3-tier Cupcake Carrier. It holds 36 cupcakes. You never have to worry about a cupcake flipping over or getting all messed up again!

I took a cooking class and a woman from a local bakery taught one of the classes. She also said to use an extra egg but then she said to bake at 25 degrees lower than it calls for and check it at 5 minutes less than the time on the box and keep checking every couple of minutes. The first time I did this it was for a chocolate cake with homemade chocolate cream cheese frosting. The cake was so moist and didn’t crumble or fall apart. Everyone was impressed and I was shocked I could make something that good.

I had no idea that you could add things to the boxed mixes. Next time I make cupcakes I will have to try this!

You actually need to use double the amount of melted butter if substituting it for oil. Example: if the order calls for 1/3 cup oil, you add 2/3 cups of melted butter to insure your cake stays moist.
