Fruit Nachos by Terra’s Kitchen

Are your kids big fruit and vegetable fans or do they turn their nose up when they see vegetables on their plate or you suggest a fruit as a snack? Oh the horror! My son actually said to me once, “but I had a fruit yesterday“! However, if you put a big bowl of potato chips or a huge plate of nachos in front of them, they are as happy as can be. Terra’s Kitchen, a West-Coast delivery service, came up with a genius dish that makes your kids think they are getting something they want like nachos or dessert, but they are really getting something YOU want them to have…fruit nachos!

Fruit Nachos by Terra’s Kitchen

Ingredients

  • 2-3 medium Peaches, Apricots, Berries, and/or Bananas, sliced
  • 1 cup Plain Whole-Milk Greek Yogurt
  • 2 TBS Freshly Squeezed Lemon Juice
  • 1 tsp Vanilla
  • 1 TBS Honey
  • Optional Toppings: Granola, Pumpkin Seeds, Coconut Chips, Mini Chocolate Chips, Dried and snipped Cherries, or Dried and snipped Apricots.

Directions

  1. Arrange the fruit slices on a large serving platter.
  2. Stir together the yogurt, lemon juice, vanilla, and honey in a small bowl.
  3. Drizzle over the fruit slices and add the desired optional toppings. Serve immediately.

Looks delicious and refreshing, doesn’t it?!? For those of you (like me!!) that don’t like pie at the holidays, this may be a great alternative! The best part is, you will get your kids eating fruits they normally wouldn’t. It reminds me of that cookbook that came out years ago by Jessica Seinfeld called Deceptively Delicious. I bought that cookbook and I was forever hiding things like spinach in spaghetti sauce, etc. What kids don’t know, won’t hurt them AND in this case, tell them it’s dessert, make it look pretty and fancy and they will eat it! Win-Win!
