As you probably know, I am always trying to come up with different banana bread recipes. My kids leave me multiple bananas every week, just so they will get super ripe. This way, I have no excuse, but to make them some banana bread. I’ve made banana bread with chocolate and peanut butter, which is always a crowd please. However, the recipe I made today was probably the best one yet. This cinnamon chip banana bread is definitely one I will be making again.

Gluten Free Cinnamon Chip Banana Bread

Delicious recipe for a gluten free cinnamon chip banana bread.

Ingredients

  • 1/2 Cup Butter softened
  • 1/2 Cup White Sugar
  • 1/2 Cup Brown Sugar
  • 2 Large Eggs
  • 2 tsp Vanilla Extract
  • 1 TBSP Milk
  • 3 Ripe Bananas mashed
  • 1 tsp Salt
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2 Cups Gluten Free Flour
  • 1 Cup Cinnamon Chips

Instructions

  1. Preheat your oven to 325°. Grease your glass loaf pan with butter and set aside.

  2. Place the softened butter and both sugars in your stand mixer and mix until creamy. Add your eggs one at a time and mix well.

  3. Next add your milk, mashed banana and vanilla extract. Mix until it is fully incorporated.

  4. Once all of your wet ingredients are mixed well, add in the salt, baking powder and baking soda. Mix for about 30 seconds.

  5. Now add your gluten free flour. Mix this by hand. Do not use your stand or hand mixer. You could quickly over mix it and your mix will become sticky. Fold in your cinnamon chips.

  6. Add your banana bread batter to your loaf pan and bake for 75 minutes. Once those 75 minutes are up, turn off your oven and allow your banana bread to cool in the warm oven for about 20 minutes. Then, remove from the oven and cool fully on a cooling rack.

*Not gluten free, that's OK! Use your regular flour in place of the gluten free flour.

Cinnamon Chip Banana Bread

Why cinnamon chips? To that I say, “why not”? I was in the baking aisle of the grocery store and I was debating between getting plain chocolate chips or the peanut butter/chocolate chip mix. Both turn out really well and my family likes both. However, then I saw the cinnamon chips and I knew I had to try them. I will admit, I am not a huge cinnamon fan. Never have been. With that said, these cinnamon chips are delicious!

I will definitely be making this banana bread recipe again. This was my first time using a glass baking dish to make banana bread and I will only use glass from here on out. I think it bakes better in glass versus the metal pans I was using previously. Like any of the recipes I post on here, if you are not gluten free and you want to use regular flour, do it! This cinnamon chip banana bread recipe will turn out with either flour!
