This quarantine has me cooking a lot! Most of the time my kids eat whatever I put on the table, which seems like a miracle, in and of itself, however, this evening, I wasn’t so sure they would. My new favorite spice to use is turmeric. It’s extremely flavorful and adds a nice kick to a recipe. I’m also all about being able to throw everything in one dish or pan and having a whole (or almost whole) meal ready to go in 45 minutes. This Mediterranean chicken dish, paired with some steamed green beans, has not become a family favorite! And it’s Weight Watcher friendly!

Mediterranean Chicken Dish
Delicious recipe for Mediterranean chicken that is filled with a lot of flavor.
Ingredients
- 4 Boneless, Skinless Chicken Breasts
- 1 med Onion sliced
- 4 tsp Jarred Minced Garlic
- 1 Cup Cherry Tomatoes
- 5-10 Red Skin Potatoes**
- 1 1/2 tsp Turmeric
- 1 1/2 tsp Cumin
- 1 1/2 tsp Paprika
- 1 1/2 tsp Coriander
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
- 2 TBSP Avocado Oil
Instructions

Preheat your oven to 400°. Spray your casserole dish lightly with cooking spray. Combine all of the dry spices in a small bowl, mix, and set aside.

Slice your onion and lay the slices in the bottom of your casserole dish. Next place your chicken breasts on top of the onions.

Sprinkle the jarred minced garlic around the chicken.

If your red skin potatoes are on the larger size, use about 5 or 6 and cut them in half. If they are on the smaller size, use about 10 potatoes and place them around the chicken in the casserole dish. Also add your cherry tomatoes.

Drizzle the avocado oil all over the chicken and potatoes. Take your bowl of seasoning and spread it over the chicken and potatoes.

Cover your casserole dish with foil and bake for about 35 minutes. Uncover and bake for about 5 or 6 more minutes. Be sure to check that the internal temperature of the chicken has reached 165°.
Recipe Notes
**If the red skin potatoes are larger, use less and cut them in half so they evenly cook evenly.
Variations to the Mediterranean Chicken Dish
This really turned out so delicious! It smelled amazing while it was cooking. If you are looking to make it a little more low carb, or even Keto, you could use radishes or turnips for the potatoes, or take the potatoes out all together. In place of the potatoes, you could use fresh green beans. Imagine how pretty this dish would look with the red tomatoes, seasoned chicken, and green beans! Next time I make this, I will probably make some rice (boil it in chicken broth instead of water…adds so much flavor)! I know the kids would really enjoy rice with their meal! Unlike their parents, they are all about the carbs!
