Keto Pork Chops with Bacon Jam

One of my absolute favorite things to make are pork chops. Mainly because my husband loves them so much and I like making things he likes. For Christmas this year, I asked my mother in law for six Keto cookbooks. It’s literally the best present ever! On Christmas, I went through each of the cookbooks and picked out several recipes I want to make this week. Tonight I made the first one…bacon jam! That bacon jam was the perfect addition to my favorite Keto pork chops!

Keto Pork Chops

I didn’t always like pork chops. Probably because I didn’t know how to make them well. Although, one year, for Christmas, I got a cast iron skillet and I have literally used that skillet multiple times a week ever since. Ever since I started making the pork chops in the cast iron skillet, it’s been my favorite thing to make and they turn out perfect every single time.

How to Make the Perfect Keto Pork Chops

I get the same boneless pork loin chops at Sam’s Club. They are a semi-thick cut. The first thing I do is dissolve about 1/2 cup of pink Himalayan salt in warm water and then add three cups of cold water to the bowl. I soak the pork chops in the salt water for about two to three hours. The next steps are key.

  • After soaking the pork chops, rinse in cool water. Pat draw and lightly salt and pepper both sides.
  • Heat 1 TBSP avocado oil in your cast iron skillet and place your pork chops inside.
  • Cook for 5 minutes and flip for 5 minutes more.
  • Preheat your oven to 375°.
  • Place your cast iron skillet in the oven and bake for 3-4 minutes on each side.
  • Use your meat thermometer and check that each pork chop has reached 145°.

What is Bacon Jam?

First of all, bacon jam is probably the best thing I have ever tasted. When my husband was traveling to the Dallas area for work a lot, he used to come home and tell me about this amazing thing called bacon jam. The combo of bacon and caramelized onions are to die for! So when I saw one of my new cookbooks had a recipe for it, I knew I had to make it! You can find the bacon jam recipe in the Keto For Foodies cookbook. This cookbook is so good that I have three recipes I am making from it this week! Definitely pick it up! These keto pork chops definitely were taken up a notch with the bacon jam!

Why Keto?

Not sure about Keto? My husband and I did Keto for a couple years, lost a lot of weight and then I had surgery that had me laid up for awhile. We decided to recommit to Keto again and get back in the shape we were in before my surgeries. There are so many myths out there about Keto. The number one being that you have to sit around and eat nothing but butter and bacon. That’s so not true! Keto is all about eating healthy fats, lowering your carbs, and using your own body fat to burn for energy.
