Keto Chicken Cordon Bleu Recipe

My husband and I have been following the Keto diet since January 23, 2016. We’ve lost quite a bit of weight, feel loads better (and look better too!), and we are eating way better food.One thing my family really likes is chicken. Just the other day I decided to make Keto Chicken Cordon Bleu for dinner. I was a bit unsure how it would turn out or if my family would even eat it. I quickly found that I had nothing to worry about. My daughter, who normally turns her nose up at things before trying it, took one bite and declared it delicious!

I’ve never made a traditional chicken cordon bleu recipe before, but I’ve eaten plenty and this, is a very easy Keto chicken cordon bleu recipe that also tastes amazing! And lets face it, with a hungry husband and two hungry kids, I want easy recipes! Lately I have been purchasing thin sliced boneless, skinless chicken breasts. They cook so much faster and I think they taste better. For this recipe, you will want to have those thin sliced chicken breasts. Trust me!

Keto Chicken Cordon Bleu Recipe

Ingredients

  • 4 Thin Sliced Chicken Breasts
  • 4 slices Ham Lunchmeat
  • 4 slices Swiss Cheese
  • 1 Egg
  • 1/2 cup Parmesan Cheese
  • Salt, Pepper and Garlic Powder, to taste

Directions

  1. Preheat your oven to 450 degrees. Place your baking sheet by placing your silicone baking sheetketo chicken on top. So easy!
  2. Place a piece of plastic wrap on a cutting board. Set your thin sliced chicken breasts on the plastic wrap and fold the plastic wrap over so it covers the chicken breasts and pound them even thinner.
  3. Beat your egg and pour it into a shallow bowl. Mix your Parmesan cheese and seasonings together in another shallow bowl.
  4. Flip your chicken breast over, add the ham and Swiss cheese and roll it up. *Tip…next time I will wrap the cheese IN the ham first and place that on the chicken. I think that will help keep the cheese in better.
  5. Holding the chicken breast together, dip it into the egg wash and then roll it in the Parmesan cheese mixture. Place it, seam side down, on your baking sheet. Repeat with the rest of the chicken breasts.
  6. Bake in the oven for 30 minutes.

What Did We Think?

This recipe will not disappoint! It is the best chicken cordon bleu recipe I have ever had!! I especially liked that it tasted good without mustard. I have a huge aversion to mustard and while I’ve eaten other chicken cordon bleu recipes, I’m always convinced I can taste the mustard (even when I really can’t). One of the nice things about the Keto diet is that casseroles and Keto go nicely together. I’ve seen a Pinterest chicken cordon bleu casserole that I have been dying to make. After seeing how well my family liked this chicken dish, I’m sure I will be able to get them to eat a baked chicken cordon bleu cassrole! I’ll be sure to write up the recipe after I make it and share it with you all.

Keto Creamed Spinach Recipe

When I decided to follow the Keto diet, I knew that I would be eating a lot of foods that I don’t normally eat. One of those foods is spinach. More specifically, cooked spinach. As I was researching different recipes, I came across a bunch of Keto Creamed Spinach recipes. After looking through them all, I put together my own recipe based on my husband and I’s own personal taste. It has become one of our favorite recipes and one that I make multiple times a month! I would even dare to say that it is very similar in taste to the Boston Market Creamed Spinach. No joke!

Keto Creamed Spinach Recipe

Ingredients

  • One pkg. Frozen Spinach (I believe it’s 283 grams)
  • 4 TBSP Cream Cheese
  • 1/2 cup Shredded Cheddar Cheese
  • Seasonings of your choice (we like salt and pepper)

Directions

  1. Place your frozen spinach into a sauce pan and heat over medium heat. You will want to cook this until the spinach is completely thawed and there isn’t a lot of water in the pan.
  2. Add your cream cheese and mix thoroughly.
  3. Add in your cheddar cheese and stir until it’s completely melted.
  4. Season and enjoy!

Not only is this an easy creamed spinach recipe, but it is, by far, the best creamed spinach recipe I’ve ever had! This particular recipe above serves 2, but it is one of those recipes that is easy to double or triple to serve more. Need a side dish for Easter? Try this Keto Creamed Spinach recipe. Vanilla Flavored Fat Bombs – Keto Diet

I’m like Oprah…I’ve tried every diet out there with very little success. Mostly because I wasn’t seeing much changing or it was too restrictive, which then brings out my rebellious side and I end up eating everything in site. The Keto diet is different. The first week I lost 7 lbs. Of course, the majority of that is water weight, but I’m into my second week now and I’m already down 1.5 lbs (and the week is not over yet). Switching gears and adding more fat into my diet is difficult, I’m not going to lie. But it’s so important to add the fat in. Since we are eating less carbohydrates, we need the fat to fuel our brain and body. Not to mention, food tastes so much better!

Benefits of the Keto Diet

Over the last, almost two weeks, I’ve noticed the following things since starting the Keto Diet:

  • Eating REAL foods
  • You’re satisfied with less food
  • Sugar cravings are completely gone
  • Diet Coke craving is completely gone
  • Sleeping better than ever
  • Mood is better

Like I mentioned above, it’s sometimes hard to get fat in. When you’ve spent the vast majority of your life buying and eating low fat foods, suddenly abandoning that leaves you scrambling at the end of the day. That’s why I make these delicious vanilla flavored fat bombs to help make up the difference. Now while I am no longer craving sugar, these vanilla flavored fat bombs are just what I need every once in awhile.

Vanilla Fat Bombs

Yields 14 Fat Bombs|116 Calories|11.7 g Fat|1.2 g Protein|0.6 g Carbs

Ingredients

  • 8 oz. block of Cream Cheese (I use Walmart brand because it says gluten free on it)
  • 1/2 cup Unsalted Butter
  • 3/4 cup Splenda
  • 1/2 tsp Vanilla

Directions

  1. Set the cream cheese and the butter on the counter for awhile so it can warm up a bit.
  2. Place all ingredients in a large bowl and using a hand mixer, blend until smooth.
  3. Place wax paper over a baking sheet or cutting board. Using a spoon, scoop a small amount until the cutting board. Continue doing so until you’ve used up all of the mixture.

You can make these as big or as small as you would like. My recipe makes 14 fat bombs. I use My Fitness Pal to figure out the calories/fat/protein/carbs for this recipe. You will want to do that with the ingredients you use to insure you have the most accurate numbers.

OH. MY. GOSH. These are delicious! It’s like eating a little mini frozen cheesecake. After freezing them for about an hour or two, I store them in an airtight container in the freezer. I would imagine you could store them in the fridge once you’ve frozen them, but I’m telling you, they are so good frozen, I don’t even know that I care to try storing them in the fridge!

Keto Recipe – Cheesy Bacon Chicken

About a week ago, I decided to start following the Keto diet. The Keto diet is a high fat, moderate protein and low carb diet. I do all of my tracking on My Fitness Pal. Making the decision to switch to this way of eating was a real difficult one for me. I kept going back and forth. Finally I got a book that was recommended to me (Why We Get Fat: And What to Do About It) and began reading. Every single thing I grew up knowing about food or thought I knew, completely went out the window. I decided to give this diet a try. Now I thought I felt good after eliminating gluten. My goodness…I feel like a million dollars eating on this new plan. I am no longer craving sugar, I have an infinite number of things to eat when I am hungry, and most importantly, I feel light. I don’t know if that makes sense, the feeling light part, but that’s the only way I can think of to describe it. You really have to give this a try to know what I mean. Before you get started, read, read, and read some more about the Keto diet. There is a TON of info out there. You can also feel free to ask. If I don’t know the answer, I will definitely try to point you in the right direction where you can get the answer!

The other night was my FIRST attempt at making a total Keto dinner. Here’s what I came up with:

Cheesy Bacon Chicken

Ingredients

  • 1 lb. Thin Sliced Chicken Breasts
  • 1 TBS Unsalted Butter
  • 6 slices Fully Cooked Bacon
  • 1/2 cup Mild Cheddar Cheese

Directions

  1. Preheat your oven to 375 degrees. Lightly butter the bottom of your glass baking dish (I used the butter wrapper). You can probably skip this part, if you wanted too.
  2. Place your thin sliced chicken breasts in the glass baking dish.
  3. Cut your butter into thin slices and place over top of the chicken.
  4. Place the bacon on top of the chicken. Sprinkle the half a cup of cheese on top.
  5. Bake for 20 minutes covered. Uncover and bake for about 10 minutes more (or until the chicken is done).

One piece of advice…use a wide spatula to help you get the chicken out of the baking dish or it will end up looking like that piece on the far right! We devoured the chicken! It was so delicious! I debated about putting the butter on it, but I think it was a good call. It prevented the chicken from sticking to the bottom of the pan and it also kept the chicken nice and moist. Ugh. I hate that word, but it’s true. The chicken was very moist. There’s that word again…

Curing Sleep Apnea and Living Healthier

Almost two years ago, my husband and I made the decision to take charge of our life and make some drastic changes. You see, I weighed 250 pounds, the highest I’ve ever been and my husband weighed well over 300 pounds. We were unhealthy. He had sleep apnea. While the snoring was annoying, listening to him stop breathing during the night was even worse. After having a sleep study and getting a CPAP machine, we knew it was time to do something drastic. We were in a very unhealthy, downward spiral. Curing sleep apnea was not something we ever expected.

What did we do?

I had heard a lot about the Keto diet from my friend Summer (The Dirty Floor Diaries…check her out. She’s awesome). If you aren’t familiar with the Keto diet, it’s a low carb diet where you eat high fat and moderate protein. As you can imagine, the idea of eating full fat was terrifying to me. Especially since I was already fat. In my mind, all I kept thinking was, “well…I’m already fat. What’s a few more pounds going to hurt if this doesn’t work?“. Imagine my surprise when this lifestyle change actually worked!

How did the Keto diet help us?

As you can see, we lost quite a bit of weight on the Keto diet. I lost close to 90 pounds and my husband lost 125 pounds! Besides the weight loss and the dramatic transformation, we had the following amazing things happened, as a result to make the Keto lifestyle our new normal:

  • No longer Type 2 Diabetic
  • Lowered LDL cholesterol
  • Raised HDL cholesterol
  • Lowered triglycerides from 300 to 65 <–for real!

Curing Sleep Apnea

The way I understand sleep apnea, there are two main causes…being overweight or something to do with the way your brain functions. Prior to us starting the Keto diet, my husband had a sleep study done. He was snoring like crazy and I couldn’t even begin to count how many times he stopped breathing during the night. It was terrifying. After the sleep study, he got a CPAP machine and let me tell you, he slept better and I slept better. It was controlling his sleep apnea very well!

A few weeks ago, he went to have a repeat sleep study done. His doctor felt it was a good idea since he had lost a tremendous amount of weight. We just got the results back yesterday.
