Weight Watchers Freestyle Week 1 Success

Making the decision to switch from the Keto diet to the new Weight Watchers Freestyle plan was not an easy decision to make. I had tremendous success with Keto, until I didn’t. More than that, I hate change! The idea of starting something new and it possibly not working for me, was almost too much to handle. Gaining my weight back is not an option. However, what ultimately pushed me to try Weight Watchers is the fact that I was just as scared to embark on my Keto journey and look how that worked out for me!

My Dieting History

I’ve tried Weight Watchers in the past and I was not very successful with it. Why? Mainly because I wasn’t ready to commit to ANY diet plan at that time. My will power was non-existent. Not because I didn’t have will power, but because I didn’t WANT to have will power. It wasn’t until I did the Keto diet that I learned about how my body processes certain foods, and the why behind everything we eat. Most importantly, I learned that I can survive just fine WITHOUT sugar. I know it sounds crazy, but I will go days/weeks/months without eating any sugar and I don’t miss it. That was a key to learn. Especially since I was a self proclaimed sugar addict!

Why Weight Watchers Freestyle?

Some people have asked me, “why Weight Watchers Freestyle program?”. They want to know why I can’t just eat based on how I’ve learned and continue on my merry way. In all honesty, I like the structure that a program that requires tracking offers. My life is crazy busy from the second I wake up until the second I go to bed. If using an app that the Weight Watchers Freestyle program offers to take all the guess work out of eating, then I am all for it! Not to mention, a lot of people I know (including my husband) are following this program so it’s nice to have support.

So…How Did Week 1 Go?

I was very excited to weigh in for week 1. With Keto, I had been on a year+ long stall. I gained a little after having my gallbladder removed and after that, everything became difficult. When I stepped on the scale, I found myself saying to myself, “oh please oh please let there be a loss”. And there was! I actually lose 5.4 pounds my first week! My husband lost 10 pounds! I can’t tell you how happy I was to finally see a loss!! Now on to week 2!

Today I Joined Weight Watchers

This weekend, my husband and I decided to change things up and start a new diet plan. After a super long conversation with members of my husbands family that are doing Weight Watchers (and scanning random foods in the fridge and looking up how many points vodka and tequila are), we decided to give this new Freestyle Plan a try. The new plan seems really interesting. Not to mention, if I am being completely honest, I am looking forward to eating a little fruit for awhile.

What Happened to Keto?

If you’ve been reading this site long or follow me on social media, you would know that, up until today, was following the Keto diet. I still love Keto. How could I not. Initially, I lost close to 90 lbs with the Keto diet. However, due to getting my gallbladder removed and dislocating my knee and not being able to go to the gym much at all, and eating things I shouldn’t eat, I gained a little weight back. For months, I have been at a stall. I think, in some areas, I was still losing a few inches here and there, but the scale was not moving. I’d love to say that didn’t bother me, but it does.

Why Weight Watchers?

This past weekend, we spend all day with my husbands family. Some people are doing Weight Watchers and we were talking about the new Freestyle Program (and we scanned way more things from the fridge than I care to admit) and it seemed really interesting to me. I like that you can eat fruits and veggies and it not count. While I will most likely still stay away from the starchy veggies, the idea of eating a nectarine or a few strawberries is fantastic!

Will You Ever Go Back to Keto?

Maybe. Right now, the goal is to stick with Weight Watchers for the next three months. If I like it, I will stick with longer. My hope is that my body gets out of it’s rut and starts losing weight again. I read that our metabolism can get used to a way of eating and just stall out. Chances are, that’s what has happened with me (along with not being as strict). One thing I am sure of, everything I have learned with Keto will probably help me be successful with Weight Watchers. For instance, I will not be adding sugar back to my diet at all. Sugar makes me feel horrible. Not to mention, I’ve seen first hand this weekend what it’s like when you do allow yourself sugar…your crazy sugar addiction comes back hardcore. No thank you!

Stay tuned for yummy Weight Watchers friendly recipes! I plan to journal this experience in the same way I did my journey with Keto. If you have any recipes I must try, please leave me a comment letting me know!!

Spicy Sausage Egg Muffins

The Keto diet/lifestyle that I have been following for almost three years now, has been the best thing I have ever done for myself. With this diet, I eat a lot of eggs. So, as you can imagine, I am always looking for different ways to make and enjoy eggs. Especially since anytime I eat eggs, it keeps me full and content for hours! The one thing you want, when starting a new diet/lifestyle plan, is to be full and content! These spicy sausage egg muffins are the perfect thing to make at the start of your week to make your mornings easy.

Spicy Sausage Egg Muffins

The perfect Keto, low carb and gluten free recipe to help you get your day started!

Course Breakfast, Snack
Cuisine American
Keyword eggs, gluten free, keto, low carb
Prep Time 10 minutes
Cook Time 27 minutes
Total Time 37 minutes
Servings 12 servings

Ingredients

  • 1 lb Spicy Ground Sausage
  • 6 Eggs beaten
  • 1 cup Egg Whites beaten
  • 1 TBSP Minced Onion
  • 5 slices Bell Pepper
  • 1 Cup Colby Jack Shredded Cheese

Instructions

  1. Preheat your oven to 350 degrees.

  2. Put your sausage in a frying pan and cook completely. Set aside.

  3. Put your 6 eggs in a pourable measuring cup like this one. Measure out your 1 cup of egg whites. Beat each separately and then mix together (trust me on this step. It makes things easier)!

  4. If you are using a metal muffin tin, lightly spray each muffin well (I like my Misto for this job). However, I have found that these silicone muffin molds work really well and nothing ever sticks!

  5. Divide your cooked sausage between each of the muffin wells. Next divide the minced onion, bell pepper and cheese.

  6. Pour the egg mixture over each muffin well. Pour slowly.

  7. Place in the oven and back for 25-27 minutes. Mine took 27 minutes.

These egg muffins are delicious! Be sure to eat them warm. However, like I mentioned earlier, these are super easy to make at the beginning of the week for quick and easy breakfast ideas! Be sure to let the spicy egg muffins completely cool before storing them in the refrigerator. Simply pull one out in the morning and reheat in the microwave. I heat mine in 25 second intervals.

Spicy Sausage Egg Muffins Macros

If you are following the Keto diet, you are probably wondering what the macros are. As always, I recommend you put the exact ingredients you purchase to get the most accurate macros. Also, look at all the options for sausage. The sausage I purchased had zero carbs. While most had zero carbs. Some did contain a few carbs.

The macros, according to the ingredients I purchased are:

  • 196 calories
  • 15.1g Fat
  • 10.9g Protein
  • 1.3g Carbs

The nice thing about these spicy sausage egg muffins, is that you can change up your ingredients (which will also change your macros). Next time I plan on making spinach and cheese egg muffins or even chorizo and cheddar (not sure what cheese goes with chorizo!) egg muffins!

Top Reasons Why You Need an Air Fryer Today!

At Christmas, I was hell bent on getting an Instant Pot. Everyone I knew had them and somehow I had convinced myself that an Instant Pot would make my life easier. Of course, like I do, I Googled the heck out of it and read some horror stories and then scared myself out of wanting one. Not to mention, it seemed like all the recipes were super involved. Not for me. Instead, I decided to get an Air Fryer. Let me tell you, that was the best decision ever! I use it multiple times a week, if not every single day!

Top Reasons YOU Need an Air Fryer

I know what you’re thinking…the last thing you need is another kitchen applianceneed air fryer taking up space. Normally I would agree with you. However, this appliance will be your favorite and most used appliance in your kitchen. Not even joking!

Reason #1 – You can make your favorite deep fried foods, but without all the hassle of the bucket of oil, the risk of getting splattered by the oil, and without the damaging affects eating heavily fried foods does to our bodies. With the air fryer, you use very little oil. The air is what fries the food. Neat, huh?!?

Reason #2 – Foods take minutes to make. My favorite thing to make in the air fryer at the moment, is fried radishes. I know. It sounds weird, but it’s so good. I spritz a little oil on the cut radishes, use my favorite seasonings and they go in the air fryer for about 15 minutes. 15 minutes is about the longest anything has ever taken in this thing!

Radishes not your thing? Well then try this air fried Spicy Brussel Sprouts recipe. It’s a favorite of ours!

Reason #3 – Looking for something a little larger for your family? The air fryer has you covered with the air fryer oven. Eventually I will be upgrading to this. I was at the gym one day and as I was on the elliptical, I watched an infomercial for the oven and you can cook a whole chicken in there for about 30 minutes. Amazing!

Are you convinced yet?

Currently, besides veggies, our favorite things to make in the air fryer are burgers, polish sausages, and popcorn shrimp for my son. Mine came with a little baking dish that I can make a cheesecake in there. I haven’t tried it yet, but it’s on my list!! A Keto cheesecake would be a great idea! You literally can make whatever you would like in here. It’s also nice not heating up the kitchen with the oven for things like my sons popcorn shrimp, their chicken fingers, etc!

Gluten Free Chewy Sugar Cookies

My absolute favorite cookie in the world is a sugar cookie. While I will eat the thin and sort of crispy sugar cookies, the ones that really get me excited are the chewy sugar cookies. You know the kind I’m talking about. The ones with the center that is just barely done. Before I started the Keto diet, I am embarrassed to say how many sugar cookies I was able to eat in one sitting. I . wouldn’t call myself a master baker, but I am able to follow a recipe. The one thing I was never able to make very well were sugar cookies. They always looked deflated and they were most definitely NOT chewy! Until now.

chewy sugar cookies

Buying pre-made sugar cookie dough was what I’ve always done. I even went as far as to buy sugar cookie dough that was already cut into shapes for Christmas. Not even lying. That solved several issues for me. My inability to make good, chewy sugar cookies, and not having to deal with flour all over my kitchen with my kids cutting out cookies. I am not that kind of mom and that’s OK! Once I learned that I needed to eat gluten free, I pretty much figured my chewy sugar cookie days were over. NOPE!

Gluten Free Chewy Sugar Cookies

Ingredients

  • 3/4 cup Salted Butter, softened
  • 1 1/2 cups Sugar
  • 2 Large Eggs
  • 1 1/2 tsp Vanilla
  • 2 1/2 cups Gluten Free Flour (I prefer this brandchewy sugar cookies)
  • 3/4 tsp Baking Powder
  • 1/4 heaping tsp Salt

Directions

For the directions on how to bake these chewy sugar cookies to perfection, be sure to check Iowa Girl Eats. I followed her directions to a T and my cookies were perfect! Even non-gluten free people loved them!

One thing I learned, when I was making these sugar cookies, was that not all baking powders were gluten free. I quickly dumped what I had and purchased the Clabber Girl brand. It says right on the container that it is gluten free. Better safe than sorry. Also, I baked cookies for the first time with parchment paper on the baking sheet and it made a HUGE difference in getting those chewy sugar cookies! I will definitely be doing that again the next time I make these cookies! One thing I will be doing the next time I bake these is using lemon extract in place of vanilla. I bet that will taste delicious!
