One of the things I knew that I wanted to do when I had kids was make sure we were home on Christmas morning. Last year I decided that I was going to make an egg casserole breakfast bake. The nice thing about this particular recipe, not only does it make 2 casseroles, but it freezes well!
Ultimate Breakfast Bake
Ingredients:
- 4 1/2 cups seasoned croutons
- 1 cup shredded cheddar cheese
- 1 cup shredded swiss cheese
- 1 medium onion, chopped
- 1/4 cup chopped sweet red pepper
- 1/4 cup chopped green pepper
- 8 eggs
- 4 cups milk
- 1 tsp salt
- 1/8 tsp pepper
- 8 bacon strips, crumbled
Steps:
- Place croutons, cheese, onion and peppers into two greased 8 inch square baking dishes.
- In a large bowl, whisk the egg, milk, salt and pepper.
- Pour liquid mixture into the two baking dishes.
- Place one casserole, uncovered in a preheated oven at 350 for 45-50 minutes (or until a knife inserted near the center comes out clean).
- Place the second casserole into the freezer and freeze for up to 3 months.
**When you are ready to cook the frozen breakfast bake, pull out of the freezer and thaw completely in the fridge for 24-36 hrs. Take it out of the fridge 30 minutes before baking. Bake in the oven at 350 degrees for 50-60 minutes (or until a knife inserted near the center comes out clean) **
We have made this so many times. It truly is an amazing recipe. So easy and one of those things that you just put together and forget out it. Recipes that are quick and easy are the kinds of recipes that I am looking for. Especially when it comes to busy mornings like Christmas morning. You want all the easy you can get on that morning. Throw some cinnamon rolls in the oven towards the end of the casserole baking and you have a great breakfast in less than an hour!

It is so good! My family loves it…I make this recipe and one other that uses hash browns in it for the bottom. But I just had one at a friends house this week that you literally broke up pieces of bread and put it on the bottom!

This sounds really tasty and easy to do. I would have to leave out the onions and peppers, I wonder if it would still be yummy. I’m picky LOL, not my kids.
