Baked Chicken to Die For!

When my husband and I got married I could not cook to save my life.  It was pitiful.  I decided to make baked chicken and ended up burning the outside of chicken, but the inside was still raw.  That takes talent right there!  And bless his heart, my husband always ate the food I made (not the raw chicken…we threw that out). When I had a genius idea to make spaghetti pie…he ate it. It was gross! However, over the years I’ve gotten quite good at cooking.  Now I look forward to family dinners; I look forward to throwing parties at my house; and most of all, I get really excited to try a new recipe.  Here’s an oven baked chicken recipe I tried tonight (adapted from the recipe found HERE).

 Baked Chicken with Garlic and Brown Sugar

Ingredients:

  • 4 Boneless and skinless chicken breasts
  • 4 Garlic cloves, minced
  • 4 Tbs brown sugar
  • 3 tsp olive oil

Directions:

  1. Preheat the oven to 400 degrees and spray baking dish with oil (I used my Mistobaked chicken filled with olive oil…if you don’t have one of these, get one!  I have two, one filled with olive oil and one filled with vegetable oil).
  2. Put the olive oil in a small pan and saute the garlic until it is tender.
  3. Remove the olive oil and garlic from heat and add the brown sugar.
  4. Place chicken breasts into the baking dish and spread the brown sugar and garlic mixture over top of the chicken.
  5. Place in the oven and bake for 30-45 minutes or until the chicken is cooked completely through.

Did The Like It?!?

My family LOVED this recipe for baked chicken.  Even picky eaters (like my son) will love this recipe!  Don’t have time to mince your own garlic? No worries! Pick up some jarred minced garlic and use that. One garlic clove is equal to about 1/2 teaspoon jarred, minced garlic.  However, we like garlic in my family so I put a little extra in!  I really recommend you use a meat thermometerbaked chicken when cooking chicken.  For instance, in my oven, it took 42 minutes for my chicken to be cooked to the proper temperature.  I wouldn’t have known that had I now had my meat thermometer! Trust me though, it was well worth the wait!  Doesn’t it look delicious?!?

    ok I just made it this but the mixture was like a paste. Should I had added more oil? oh well I’ll check it when it comes out of the oven. Sounds really good.

      I hope it turned out good for you. Yes it was thick for me as well. But it still baked well. I do think next time I may add an extra tsp of oil. but I don’t know. They turned out really well.

    Made this tonight and my daughter loved it!!! I did have to add a little more olive oil to the sugar mixture and it did great. I think next time I make this I am going to put a little rosemary in the sugar mixture.

          Bonnie, the old recipe had a higher temp, but I since tried it at a lower temp and like it that way better. It’s noted at the bottom of the recipe!

            Originally when I made this recipe, I did not. But I probably would now, as that is what I tend to do with most chicken recipes I make.

        I just made this on top of pork chops. Worked really well. I baked in a 13x9x2 glass dish at 400 for 15 min. The chops were thin and came out great!

      I made it uncovered, but if you want to cover it, I would uncover it for the last ten minutes or so. That’s what I usually do with my covered chicken recipes.

    Okay.. I think my oven must get hotter than everyone else’s? This ended up a little dry and burnt? Fire alarm went off during cooking? I’m going to lower the temp next time because I really don’t think this was how it was supposed to turn out?

      Oh wow! It might be. My old oven was getting a lot hotter and i wasn’t until I purchased one of those oven thermometers that I realized just how much hotter it was getting.

      I’ve had bad luck with cooking chicken tenderloins in the oven. I usually use my George Foreman grill. However I do make chicken fingers from chicken tenderloins and I put them on a rack in a drip pan and turn the heat down. If you didn’t want to do it that way, another thing I would do would probably cover them with foil.

    Made this tonigh, and it was awesome! I did lower my oven temperature to 400 after about 5 minutes, though, because it was smoking!! Only took about 10 more minutes to cook. So simple!

      I just made it the other day as well and I lowered the temp to 400 as well. It didn’t smoke on me at all the first time, but this time it did.

      I’ve never made it in the crockpot, but when I do cook chicken in the crockpot, I cook it for about 6 hours. So I’d probably cook it on low for six hours, checking it with a meat thermometer after 5 hours.

      I love garlic so I put it in almost everything I make. I really don’t know what you could sub for the garlic.

      I have taken different seasonings and mixed it with olive oil to marinate meat and it’s turned out OK…you could maybe do that with this.

    Looked really good in the picture. Made it and it was the worst thing I’ve ever made. I followed the recipe exactly. What I got was sweet coated chicken, candied minced garlic, and (after it had all melted off the chicken) burnt brown sugar around the chicken breasts. I don’t know what went wrong.

    I have two cut up chickens (16 pieces total) that I have cleaned and taken skin OFF.
    I would like to bake it (dinner tonight, a lot of company).
    Looking for a recipe. do you think this would work with skinless bone-in chicken?
    I would mix it up, add rosemary and rub all over…then bake uncovered. what do you think?…
    other suggestion?

      Honestly, I don’t know. I don’t ever buy bone-in chicken so I don’t know how cooking goes with that. Maybe lower the temp down. But I really don’t know other than that.

      Hi Krissy! If it were me, I would probably make 1 1/2 times the amount I listed so maybe 2 more TBS brown sugar, 1.5 tsp more oil and 1-2 more cloves of garlic (I would do 2 because I love garlic, but that’s up to you!).

    I just prepared this recipe and in the oven now. I did add a little extra olive oil because the garlic and brown sugar mixture looked a bit dry. I’m wondering if you need to add any extra seasoning for flavor or does it already have good flavor?
    As we all know chicken is very bland. Im cooking it on 375 and i did cover with foil because i don’t want it to dry out.

      I felt it had good flavor. No one added anything else too it…my husband may have added pepper to his, but he adds pepper to everything he eats!

    One of my favorite chicken recipes is crockpot chicken. Just dump chicken into a crockpot and cover with a bottle of your fave BBQ sauce, set on high and dinner is ready in 4 hrs. Your recipe looks easy and would put dinner on the table in no time and I LOVE IT!

      You can certainly add salt, if you would like. I would not add more than a 1/2 teaspoon. I tend to add salt after the fact…that way I don’t end up over salting.

    The photo looked enticing and the recipe was easy. The bad news is it came out dry, lacking in flavor and looked nothing like the photo. I don’t know why. My oven was set for 400 and pre-heated.. I cooked the chicken for 35 minutes and gave it another 5 minutes because it hadn’t browned. I wish it had worked out.

      Sorry it didn’t work out for you. I’ve made this a lot and it always turns out for me. I’m not sure what to tell you. Maybe try 30 minutes and broil for a few minutes to brown it.

    this thing was ok but I felt like it was too sweet if I don’t want it to be sweet next time what should I do? I think I will find a better recipe.

      You could always cut some of the brown sugar. Sometimes I add spice to things when I want to cut the sweetness. It’s really up to you.

    I tried it tonight and it looked nothing at all like the picture. The brown sugar mixture was thick and I spread it over the top of the breasts, baked it at 400 until the internal temp was 165. It was sitting in deep chicken juice/oil and was very white. I moved it all to a new pan for the last 5 minutes to get it out of the fluid. It was fine but like plain baked chicken. Very little flavor, not browned at all. No idea why it didn’t turn out well, I know most have loved it when they made it.
