Gluten Free Banana Muffins Recipe

Going gluten free was the best thing I’ve ever done for myself. After speaking with my allergist, and finding out that I am allergic to tree nuts, he mentioned that I should try eliminating gluten from my diet and see if it helps some of the issues I was having. I’ve honestly never felt better!

While I was at Sam’s Club the other day, I bought the Krusteaz Gluten Free 5 lb. bag of flour. It said that you can swap the gluten free flour 1:1 with regular flour. That seemed easy enough! And it got great reviews online so I figured I’d give it a try. I had a banana muffin recipe that I was dying to make gluten free!

Gluten Free Banana Muffins

Ingredients

  • 3 Ripe Bananas, mashed
  • 1/3 cup Butter, melted
  • 1 Egg
  • Dash of Vanilla
  • 3/4 cup White Sugar
  • 1/2 tsp Salt
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 1/2 cups Krusteaz Gluten Free Flour

Directions

  1. Preheat the oven to 350 degrees and place muffin liners in your muffin pan.
  2. Using a potato masher, mash the bananas thoroughly.
  3. Mix the bananas, the egg, melted butter and dash of vanilla together.
  4. Add the sugar, baking powder, baking soda and salt to the mixture and mix well.
  5. Fold in the Krusteaz Gluten Free flour and mix until you can’t see the flour.
  6. Fill the muffin liners 3/4 of the way full and bake for 26-28 minutes (I overfilled mine and they needed the full 28 minutes).

Are the Banana Muffins Good?

The Krusteaz Gluten Free flour is amazing! These muffins were good the first time I made them, but I’m telling, they are even better now! They are, by far, the best gluten free banana muffins I’ve ever tried!! My kids and husband are still raving about them!!

    These are absolutely the best banana muffins I’ve ever made! I added 1/2 tsp. of xanthan gum, cinnamon and used Bob’s Red Mill GF all-purpose flour, plus chopped walnuts. They are fluffy and delicious! Thank you for this recipe!

    I made half recipe with 2 bananas & no egg.
