There is nothing better in the than chicken noodle soup. Especially when you are sick. All last week I was laid up in bed sick. This soup would have been amazing to have. They say chicken noodle soup has properties to help you when you are sick. I don’t know if that’s true or not, but I will eat chicken soup every single day during the winter to not go through what I went through last week! If you are following the Weight Watchers Blue Plan, this chicken noodle soup is 3 points per serving!

Weight Watchers Chicken Noodle Soup

Delicious recipe for gluten free chicken noodle soup. This is the ultimate comfort food.

Ingredients

  • 1/8 Cup Extra Virgin Olive Oil
  • 2 1/2 lbs Chicken Breast
  • 1 Cup Baby Carrots cut into pieces
  • 6 Ribs Celery cut into pieces
  • 1 Small Onion chopped
  • 2 Small Shallots chopped
  • 2 Med Garlic Cloves minced
  • 10 Cups Fat Free Chicken Broth
  • 12 oz Barilla Gluten Free Penne Pasta
  • 2 Cups Water
  • 2 1/2 TBSP Dried Parsley
  • Salt to taste
  • Pepper to taste
  • Red Pepper Flakes to taste
  • Garlic Powder to taste

Instructions

  1. Boil your chicken breasts with salt, pepper and garlic powder for about 35 minutes. Once cooked, cut into pieces or shred. Set aside.

  2. In your dutch oven or stock pot, add your olive oil, carrots, onion, celery, and shallots. Cook for about 10-15 minutes. Next add your minced garlic. I used jarred...it's easier!

  3. Add your chicken to the dutch oven. Mix the chicken and vegetables. Add your chicken broth and water. Next add your uncooked noodles. If the liquid looks a little bit too low, add a little more chicken broth and water. I would do 1 cup broth and 1/2 cup water intervals until you have enough liquid.

  4. Now add your salt, pepper, and red pepper flakes to taste and simmer this all together for about 45 minutes. Add your dried parsley with about 10 minutes left.

*Use regular pasta if you do not wish to make this with gluten free pasta. 

Gluten Free Chicken Noodle Soup

This soup is so good! I ate a bowl this morning for breakfast and I literally want to eat it for every single meal! If I could change one thing about this recipe, it would be the noodles. There were very few gluten free noodle options at the grocery store. I would have preferred to have egg noodles, but I have yet to find gluten free egg noodles. Regardless, this was good just the way it is.

Can I use a Slow Cooker/Instant Pot?Ninja Foodi?

Sure! I don’t have an Instant Pot or the Ninja Foodi (though I think I may want the Ninja Foodi…), but I would totally make this in the slow cooker. The way I would do it in the slow cooker is to add ALL of the ingredients, except for the noodles and cook on low for about 4-6 hours (or high for about 2-4 hours). About 20 minutes before the soup is done, remove the chicken, shred and add it back to the slow cooker. Cook your noodles separately on the stove to just before they are done. Add them to the slow cooker and cook for about 10-15  minutes.
