Now that my husband and I are back on Keto, I am having a fun time making a bunch of different Keto recipes. At all times, there is a rotisserie chicken in my fridge from Sam’s Club. They are perfect for those nights when we need to get our macros right and need a little more protein. A week or two ago, I picked up a new (to me) seasoning from Aldi called Tajin Chili Lime seasoning. My husband loves traditional chicken salad. I thought I would make him a zesty Keto chicken salad with the Tajin seasoning!

Ingredients

  • 10 oz Shredded Chicken
  • 2/3 Cup Dukes Mayo
  • 11/2 Celery Stalks chopped
  • 1 TBSP Lime Juice
  • 1 tsp Tajin Chili Lime Seasoning
  • 1/4 tsp Salt
  • 1/8 tsp Black Pepper
  • 1/8 -1/4 tsp Onion Powder

Instructions

  1. Place your shredded chicken into your mixing bowl. I chose to use a rotisserie chicken, but you can use canned chicken, or whatever chicken you want to use!

  2. Next add your chopped celery, mayo, lemon juice, Tajin seasoning, salt, and pepper. Mix well.

  3. Add 1/8 tsp of onion powder. Mix and taste. Add another 1/8 tsp of onion powder if you desire (I did!).

  4. Enjoy by itself, on a chaffle bun, or on a bed of lettuce!

Macros for the Keto Chicken Salad

Since I use My Fitness Pal to track my macros, I always put my recipes in that app. Below you will see the macros for the Keto chicken salad. These macros are a result of the exact ingredients I used. Use this as a guide line for yourself, but definitely build a recipe in the app you use to get the exact macros for the ingredients you use.

Other Keto Recipes You Must Try!

Eating Keto is not that difficult. The best piece of advice I can give you is to plan, plan, plan. If you plan ahead, you won’t be left scrambling in the evening. This Keto chicken salad was a huge hit with my husband. Other recipes we love are:

Feel free to reach out with questions. My husband and I did Keto for a few years, then took a little break when I had a few surgeries and now we are back at it. The first time I did Keto, I lost 90 lbs! I did gain a little back after having three back to back surgeries, but I am convinced I will get to my goal weight this time around! This was our before/after pic.
