When I was a kid, my absolute favorite food was pizza. I literally could eat pizza for every single meal and never get sick of it. Now, as an adult, I tend to gravitate towards chicken. If you were to ask my daughter, she would say that I only make chicken and broccoli. She’s kind of not wrong! The other night, I wanted to combine my favorite food from my past with my current favorite. This pizza chicken casserole was super easy to throw together and absolutely delicious. In fact, I didn’t even get to have the leftovers. Both kids ate it the next day for lunch!

Keto Pizza Chicken Casserole

Delicious, low carb, Keto friendly recipe for pizza chicken casserole. This is the ultimate comfort food.

Ingredients

  • 2 lbs Chicken Breast cooked and cubed
  • 1 Cup Rao's Marinara Sauce
  • 8 oz Cream Cheese
  • 1 tsp Minced Garlic
  • 8 oz Shredded Mozzarella Cheese
  • 15 Pepperonis

Instructions

  1. Preheat your oven to 350°

  2. Cook your chicken breasts and cut into cubes. I boiled my chicken with two bay leaves, garlic, salt, and pepper. Once your chicken is cooked and cubed, place it on the bottom of your 9x13 baking dish.

  3. Next put your cream cheese and minced garlic in the microwave for about 20 seconds. Stir and drop spoonfuls all over the chicken.

  4. Top with your sauce, shredded mozzarella, and pepperonis.

  5. Bake in the oven for 30 minutes and broil for about 2 minutes. Enjoy!

A Few Tips

Everyone in the house loved this pizza chicken casserole. In fact, it will be something I definitely make at least once a month. The next time I make this, I will most likely sprinkle a tiny bit of Italian seasoning on it. But in all honesty, it was good without it! Like I said, both kids scarfed up the leftovers the next day!
