My biggest weakness, at this time of year, are sugar cookies. I love sugar cookies, especially frosted sugar cookies. Being Keto, typically things like sugar cookies are a no no. However, since using almond flour for all of my cooking and baking, I have found that (for most things) I can replace almond flour for my gluten free flour. These Keto sugar cookies are the best Keto desserts I have ever had.

Baking with Lakanto MonkFruit

My absolute favorite zero calorie sugar to use is Lakanto Monkfruit. It has absolutely zero affect on your blood sugar and it is as sweet as sugar. I noticed that a lot of Keto dessert recipes recommend using two types of sweeteners. One of my favorite combinations are Lakanto Monkfruit and a little bit of liquid Stevia. A little liquid Stevia goes a long way!

The Best Keto Sugar Cookies Recipe

Recipe for the best low carb Keto sugar cookies.

Ingredients

  • 1/2 Cup Butter softened
  • 2 Large Eggs
  • 1/4 tsp Liquid Stevia
  • 1/8 tsp Almond Extract*
  • 1 tsp Vanilla Extract
  • 1/2 Cup Lakanto Monkfruit
  • 2 Cups Almond Flour
  • 2 tsp Baking Powder
  • pinch Salt

Frosting

  • 3 tsp Heavy Whipping Cream
  • 5 TBSP Powdered Lakanto Monkfruit**

Instructions

  1. Using your stand mixer, place the softened butter, eggs, liquid Stevia, almond extract*, and vanilla extract in the mixing bowl and mix until the butter is completely whipped.

  2. Add your Lakanto Monkfruit, almond flour, baking powder, and salt in the bowl and mix until thoroughly incorporated.

  3. Take a piece of plastic wrap and place the cookie dough on the plastic wrap. Roll into a ball and wrap tightly. Place in the fridge for at least one hour. I personally like to chill the dough for a little longer, but an hour works just fine! Just chill the dough. Trust me!

  4. Preheat your oven to 350°. Using a small cookie scoop, scoop out your cookies. Roll them into a ball and slightly flatten (just a little).

  5. Bake for 14 minutes. Allow to cool on the baking sheet for about 5 minutes before moving to a cooling rack.

  6. Store cookies in an airtight container in the fridge.

Frosting

  1. Place your powdered monkfruit in a small bowl and add the heavy whipping cream. Mix well. If you want to make it a color other than white, I recommend you use gel coloring.

Recipe Notes

*Experiment with extracts! The almond extract takes great, but I bet lemon would be amazing too!

**If you can't find powdered Monkfruit, make your own. Place the amount you need in your blender (I use my Vitamix) and blend until it becomes a powder!

How Good Are They?

You guys, these are the best! A few years ago, I made a very similar sugar cookie recipe, but with gluten free flour. I was hesitant on whether this would work out, but it did! And the best part…they taste better and better the longer they sit in the fridge! I don’t know how that is possible, but it is!

Keto Sugar Cookie Macros

Now…like every recipe I put on here, I will give you the macros, but please use your own macro tracker to figure out the macros with the specific ingredients you use.

Calories – 75 g

Total Fat – 7.3 g

Total Carbs – 2.6 g

Protein – 1.3 g

Make these!! You will enjoy them! Literally the best. We ate all of the cookies I made the other day, but I will be making more. I think I am going to make a batch with lemon extract. I really think these would be good with lemon extract.
