Banana muffins are a favorite in our house. Whether they are plain or have something (like chocolate or peanut butter) added to them, it doesn’t matter. We just love them. When I was at the store the other day, I was in the baking aisle and saw chocolate covered english toffee chips. Right away I threw a bag in my cart. I thought for sure the kids would like this new addition to this weeks banana muffins! “This weeks” because they are forever leaving just enough bananas to get ripe, so I have to make muffins or throw them away! Smart kids! So, this week I made gluten free English toffee banana muffins.

English Toffee Banana Muffins
Delicious recipe for gluten free english toffee banana muffins
Ingredients
- 1/2 Cup Butter softened
- 1/2 Cup White Sugar
- 1/2 Cup Brown Sugar
- 2 Large Eggs
- 2 tsp Vanilla Extract
- 1 TBSP Milk
- 3 Ripe Bananas mashed
- 1 tsp Salt
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 2 Cups Gluten Free Flour
- 1 Cup English Toffee Chips
Instructions

Preheat your oven to 325°. Prepare your muffin tins with your desired muffin liners and set aside.

Place the softened butter and both sugars in your stand mixer and mix until creamy. Add your eggs one at a time and mix well.

Next add your milk, mashed bananas, and vanilla extract. Mix until it is fully incorporated.

Once all of your wet ingredients are mixed well, add in the salt, baking powder, and baking soda. Mix for about 30 seconds.

Now add your gluten free flour. Mix this by hand. Do not use your stand or hand mixer. You could quickly over mix it and your mix will become sticky. Fold in your english toffee chips.

Use your batter spoon to evenly fill each of your muffin liners.

Bake for 26-28 minutes.
Recipe Notes
*Don't have gluten free flour or don't follow a gluten free diet, no problem! Simply use your regular flour in place of the gluten free flour.
English Toffee Banana Muffins
The chocolate covered, english toffee baking chips are a nice touch to the banana muffins. My kids really don’t know which of my banana muffin recipes they like the most. From the way they are gobbling these up, I would say these are a huge hit! You can find the english toffee chips in your local grocery stores baking aisle. Also, I intended to only put a cup in, but I spilled it and ended up pouring the whole bag in! So, when you are making yours, I guess decide for yourself if you want just a cup or the whole bag for your english toffee banana muffins!
