Gluten Free Meal: Udi’s Pizza and Brownies with Peanut Butter Buttercream Frosting!

One of the most important things to me is to have family dinners together. Because of our schedules, sitting down together, as a family, doesn’t happen very often and I’d be lying if I said that it didn’t bother me tremendously. I would like nothing more than for my husband to go to work each day, come home at 6 pm and we all sit down together and talk about our day. Since we can’t sit down together every night, we do make it a point to have a family game night or family movie night once each weekend.

I told you, not too long ago, about how my family and I went to our local Walmart to try a few new gluten free items that Walmart was selling. While I was there, I picked up two different Udi’s frozen pizzas.

For our last movie night, I knew that I wanted to make the entire meal gluten free. So I made the pizzas, which were super easy! Just put a piece of foil on the oven rack, place the pizzas on the foil and bake for about 12 minutes!

The pizzas were pretty good. I definitely enjoyed the Margherita pizza most. Neither of my kids have to eat a gluten free diet, so they have not had much things that were gluten free. Bella enjoyed the gluten free pizza more so than Zack, but every one ate their dinner! One pizza was enough for two people to share (with a salad or something else to go with it). I think Bella, had a let her, would have eaten the entire pizza herself! These pizzas, as well as a whole slew of other gluten free items, can be found in the frozen food section of your local Walmart store!

We don’t have dessert often. My kids would like it if every single meal ended with some sugary, chocolaty dessert! For our family movie night, I decided to make gluten free brownies with homemade peanut butter buttercream frosting! For the brownies, I bought a box mix. The actual brownies were delicious…the frosting…oh my goodness…it was soooooo good. You’ll have to try the recipe below!

Peanut Butter Buttercream Frosting

Ingredients

  • 1 cup peanut butter
  • 1 1/2 cups powdered sugar
  • 3 TBS milk
  • 1 stick butter, softened
  • Splash of vanilla

Directions

  1. Chill a metal mixing bowl. If you don’t have one, that’s OK, but I prefer to use a chilled mixing bowl when making frosting.
  2. Cream the peanut butter and softened butter together. Add the powdered sugar, milk and splash of vanilla.
  3. Beat on medium speed for a few minutes.
  4. Frost and enjoy!

I’m drooling just thinking about that frosting!! If you make this frosting AND you require a gluten free diet, be sure to read the label on your powdered sugar. Not all powdered sugar is gluten free! <–I just learned this when I was buying powdered sugar!

So there you have it! We are VERY excited that Walmart is carrying so many gluten free options! There are so many things I want to try! Other brands you can check out at your local Walmart, besides Udi’s, are:

  • Nature’s Path
  • Quaker
  • Glutino

    Udi’s is our favorite GF brand – we love their bread, but can’t believe we haven’t tried their pizza yet. Your brownies look so good.
