Quick and Easy Buffalo Chicken & Cauliflower Casserole!

How many times are you going about your day, jumping from one task or errand to another and then realize that you didn’t figure out anything for dinner? Happens to me more times than I care to mention. Happened this afternoon, in fact. I hate when this happens because I’m using starving and don’t want to take a long time to make dinner so I end up eating take-out. Not only is that not good for me or my family, but it costs money…money we really don’t need to spend since we have a freezer and fridge full of food. If this sounds like you, then you will really like this buffalo chicken and cauliflower casserole!

The other day I picked up some new Birds Eye® Buffalo Cauliflower that I was dying to try. I love buffalo chicken and cauliflower, so I figured buffalo cauliflower would be awesome (I was right). I’m also a huge fan of the grilled chicken strips (or the diced chicken) because I like to have salads during the week and add a little chicken to it. So I decided to combine those two things (with a few other ingredients) to make a delicious and QUICK meal!

Buffalo Chicken & Cauliflower Casserole

Ingredients

  • 2 packages of the new Birds Eye® Buffalo Cauliflower
  • 1 lb cooked chicken cut into bite size pieces (I used the grilled chicken strips found in the refrigerator section at the grocery store)
  • 1 cup shredded cheese (I used the Fiesta blend)
  • 2 green onion stalks, chopped
  • 1/4 cup Real Crumbled Bacon
  • 3 tsp Buffalo Sauce
  • Salt, to taste
  • Pepper, to taste
  • Cayenne Pepper, to taste

Directions

Step 1: Preheat your oven to 400 degrees. Place the Birds Eye® Buffalo Cauliflower in the microwave and cook on high for 6 minutes (time may vary depending on your microwave). Be sure to do one package at a time.

Step 2: While you are steaming the cauliflower, cut your chicken into bite sizes pieces and place in a bowl with the salt, pepper, cayenne pepper and buffalo sauce. Stir to completely mix all the ingredients.

Step 3: In a baking dish, put a layer of chicken and cauliflower, followed by cheese, green onion and bacon. Repeat one more time.

Step 4: Place in the oven and bake for about 15 minutes or until the cheese is completely melted.

Not only did this dinner use up what I already had available in my kitchen, but it took next to no time to make. All in all, I had the food on the table in just under 30 minutes! Both kids tried it (which is HUGE) and my husband devoured it! I think this is my new favorite dinner!! Check out that bite sized deliciousness!

Whether you choose to incorporate the new Birds Eye® Buffalo Cauliflower into one of your recipes or use it as a side dish, you won’t be disappointed. The cauliflower was so delicious and crunchy. Frozen veggies can be rather iffy sometimes, but I’m telling you, the Birds Eye® Buffalo Cauliflower was, by far, the best frozen vegetable I’ve ever had!

    This looks delicious! We make a similar buffalo chicken recipe, however I’ve never thought to add veggies in with it. I think my family would really like this!

    Yum! This is one of the recipes that’s easy to do when you have your own oven. I love the taste of buffalo and bacon with cauliflower.

    Yum that’s a good looking dinner dish. A great way to eat cauliflower I’m drooling. I like making dinner that cause me less amount of time. Working full time and running household is a lot work.
