Lemon Chicken Skillet Dinner Recipe

Eating healthier is always a goal in this family. In fact, over the last couple months, we have really done a good job cutting out a lot of sweets and adding in more vegetables. Even the kids! They have discovered that they love broccoli (so long as their is Ranch to dip it in) and they also like the “white broccoli” a.k.a. cauliflower. We also eat a lot of chicken.

Lemon Chicken Skillet Dinner


  • 1 TBS Olive Oil
  • 4 Boneless, Skinless Chicken Breasts
  • 1 cup Red, Yellow and Orange Peppers, sliced
  • 1/2 cup Onions, chopped
  • 1/2 cup Cherry Tomatoes, sliced
  • 1 cup Broccoli, cut into small pieces
  • Juice from 1 Lemon
  • Juice from 1 Lime
  • Salt and Pepper, to taste

  1. Prep the cast iron skillet by adding the olive oil to it.
  2. Cook the chicken in the skillet on medium heat. Sprinkle salt and pepper over the chicken.
  3. Cook the chicken while adding the juice from both the lemon and lime.
  4. Add the chopped onions and continue cooking the chicken and onions until the onions are almost soft (about 10 minutes).
  5. Cook chicken until it is brown on both sides.
  6. Add tomatoes, peppers and broccoli to the skillet and continue cooking until the veggies are tender (about 10 minutes).

Doesn’t it look delicious?!? You really can customize this to your own tastes. Don’t like broccoli…not a problem. Take out the broccoli and put in cauliflower or even zucchini would be good! I showed this chicken skillet dinner to my kids and they both admitted that it looked really good! I may get them to try peppers and possibly even eat an onion that’s not the Bloomin’ Onion from Outback! Enjoy!

Quick and Easy Buffalo Chicken & Cauliflower Casserole!

How many times are you going about your day, jumping from one task or errand to another and then realize that you didn’t figure out anything for dinner? Happens to me more times than I care to mention. Happened this afternoon, in fact. I hate when this happens because I’m using starving and don’t want to take a long time to make dinner so I end up eating take-out. Not only is that not good for me or my family, but it costs money…money we really don’t need to spend since we have a freezer and fridge full of food. If this sounds like you, then you will really like this buffalo chicken and cauliflower casserole!

The other day I picked up some new Birds Eye® Buffalo Cauliflower that I was dying to try. I love buffalo chicken and cauliflower, so I figured buffalo cauliflower would be awesome (I was right). I’m also a huge fan of the grilled chicken strips (or the diced chicken) because I like to have salads during the week and add a little chicken to it. So I decided to combine those two things (with a few other ingredients) to make a delicious and QUICK meal!

Buffalo Chicken & Cauliflower Casserole


  • 2 packages of the new Birds Eye® Buffalo Cauliflower
  • 1 lb cooked chicken cut into bite size pieces (I used the grilled chicken strips found in the refrigerator section at the grocery store)
  • 1 cup shredded cheese (I used the Fiesta blend)
  • 2 green onion stalks, chopped
  • 1/4 cup Real Crumbled Bacon
  • 3 tsp Buffalo Sauce
  • Salt, to taste
  • Pepper, to taste
  • Cayenne Pepper, to taste


Step 1: Preheat your oven to 400 degrees. Place the Birds Eye® Buffalo Cauliflower in the microwave and cook on high for 6 minutes (time may vary depending on your microwave). Be sure to do one package at a time.

Step 2: While you are steaming the cauliflower, cut your chicken into bite sizes pieces and place in a bowl with the salt, pepper, cayenne pepper and buffalo sauce. Stir to completely mix all the ingredients.

Step 3: In a baking dish, put a layer of chicken and cauliflower, followed by cheese, green onion and bacon. Repeat one more time.

Step 4: Place in the oven and bake for about 15 minutes or until the cheese is completely melted.

Not only did this dinner use up what I already had available in my kitchen, but it took next to no time to make. All in all, I had the food on the table in just under 30 minutes! Both kids tried it (which is HUGE) and my husband devoured it! I think this is my new favorite dinner!! Check out that bite sized deliciousness!

Roasted Whole Chicken with Delicious Dry Rub

Over the weekend, we were watching some cooking show competition on television and one of the contestants made a dry rub for chicken that sounded absolutely delicious. I knew I wanted to make an oven roasted whole chicken recipe. Of course, I did not write the dry rub down. However, while I was grocery shopping, I picked up a whole chicken and decided to put together as much of the dry rub ingredients that I could remember and then hoped and prayed it turned out OK!

Roasted Whole Chicken Dry Rub Recipe


  • 1 1/2 TBS Brown Sugar
  • 1 1/2 TBS White Sugar
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • 2 tsp Cayenne Pepper
  • Black Pepper, to taste
  • 1 TBS Butter, softened 
  • 5 lb Whole Chicken (or meat of your choice)


  1. Preheat the oven to 375° or use your slow cooker!
  2. Remove the nasty stuff inside the chicken and rinse it inside and out. Pat the chicken dry with paper towel. Place in a baking dish or on a baking sheet with sides breast side up.
  3. Combine all of the ingredients (except the butter) in a small bowl and mix it together.
  4. Rub the butter all over the chicken. Be sure to cover the legs and wings well.
  5. Rub the dry rub all over the chicken and inside the chicken.
  6. Cover the chicken with foil and bake for 1 hour. Remove the foil and bake for another 45-50 minutes. * If you are using your slow cooker, be sure to use slow cooker linersroasted whole chicken and place a few balled up pieces of foil at the bottom, place the chicken on top and cook for 6-8 hours on low.

How Was It?

You guys…this was the best roasted chicken recipe ever! My kids DEVOURED it! The skin was crispy and delicious!  This tastes really good if you wanted to use your slow cooker to make the roasted whole chicken. Place balls of foil on the bottom of the slow cooker and then place the chicken on top of the foil. No matter how you choose to make this recipe, it is a very easy roasted chicken recipe!

I have made this roasted chicken recipe a bunch of times and it is ALWAYS a favorite in our house! I’ve never had it turn out bad! Definitely put it on your weekly menu. Whole chickens are usually pretty inexpensive, so stocking up on them when they are on sale is a good idea! I think I have four or five in my freezer right now!

Catalina Crunch Chicken Fingers Recipe

I love making my own chicken fingers. Growing up, I can remember my mom buying the Shake ‘n’ Bake stuff to bread the chicken…I’ve done that before, but I very much prefer making my own breading. Once I breaded the chicken with sour cream and onion potato chips…so good! I’ve also breaded chicken with pretzels…I thought it was absolutely delicious, my husband did to…kids, not so much.

Tonight I decided to make an old favorite, baked Catalina Crunch chicken fingers!

  • 16 oz. Bottle Zesty Catalina Dressing
  • 2 cups Fiber One Cereal, crushed
  • 2 lbs Boneless, Skinless Chicken Tenderloins
  • Salt, to taste
  • Pepper, to taste
  • Garlic Powder, to taste
  • 1 cup flour


  1. Preheat the oven to 375°. Cover two baking pans with foil (makes clean-up so much easier).
  2. Crush the Fiber One cereal (a blender works really well…and quick!). Using three bowls, place 1 cup flour in one bowl, Fiber One cereal in the second bowl and the Zesty Catalina dressing in the third bowl. Add salt, pepper and garlic powder to the Fiber One cereal and mix lightly.
  3. Roll each chicken tenderloin in the flour first, then in the Catalina dressing and end with the Fiber One cereal. You can skip the flour step, if you want, but by rolling the chicken in the flour first, it allows the Catalina dressing to stick to the chicken better.
  4. Place each chicken tenderloin on the baking sheets and bake for about 30 minutes.

These chicken fingers turned out absolutely delicious! Both kids devoured them, which is awesome! Bella normally turns her nose up at everything that we all like. The kids liked dipping them in ketchup and Ranch dressing, but they were really good all by themselves!
