Cinnamon Roll Bread Recipe

I’m going to let you in on a little secret. You ready for this? Are you sure? OK…here it goes. I do not like cinnamon. At all. Well, except for the hint of cinnamon in my apple cider wax melts. However, like the rest of the world, my kids LOVE cinnamon. One of their favorite things are cinnamon rolls. Especially the kind you can buy at Ikea! So, today, I decided to use my gorgeous matte black KitchenAid stand mixercinnamon roll bread I got for Christmas and make cinnamon roll bread.

Cinnamon Roll Bread Recipe

Delicious recipe for cinnamon roll bread.

Ingredients

  • 1/3 Cup Olive Oil extra virgin
  • 1 Large Egg room temp.
  • 1 Cup Sugar
  • 1 Cup Milk
  • 1 TBSP Baking Powder
  • 1/2 tsp Salt
  • 2 Cups Gluten Free Flour

Cinnamon Sugar Swirl

  • 1/3 Cup Sugar
  • 2 tsp Ground Cinnamon

Vanilla Topping

  • 2 Cups Powdered Sugar
  • 4 TBSP Butter softened
  • 1 tsp Vanilla Extract
  • 3 TBSP Milk

Instructions

  1. Preheat your oven to 350 degrees. Grease your loaf pan and set aside.

  2. In a mixing bowl or your stand mixer, add the sugar, oil, milk and egg. Mix well. 

  3. One at a time, add your salt, baking powder and flour. Mixing well in between each addition. 

  4. Add the cinnamon and sugar for the swirl in a small bowl. Mix lightly with a spoon until it is thoroughly incorporated.

  5. Place have of the batter in your greased loaf pan. Add some of the cinnamon sugar swirl mixture and slowly take a butter knife and gently cut that swirl mixture through the batter. 

  6. Add the rest of the batter into the loaf pan and put the rest of the cinnamon sugar mixture on top of that. Again, slowly cut that swirl mixture through the batter.

  7. Bake in the oven for 55-60 minutes. Remove and immediately place tip the bread onto a wire rack. While the bread is cooling, mix up your topping and pour over the loaf of bread. Enjoy!

Delicious Cinnamon Roll Bread

OK…so, like I said, I don’t like cinnamon, but this cinnamon roll bread smelled amazing while it was baking. You will have a little bit of the vanilla topping left over. Feel free to add more to the top of the bread. If I ate this cinnamon roll bread, I can tell you, I would want MORE frosting! However, the amount I have on there is what my husband and kids like. Also, I make everything gluten free (love this gluten free flourcinnamon roll bread), but you can totally use the same amount of regular flour.

Each slice of this cinnamon roll bread has just the right amount of the cinnamon sugar swirl. I have a feeling the kids will be fighting to finish this bread off! They’ve already asked me if I will make this cinnamon roll bread again. I’m guessing it’s a keeper!

This time of year, my absolute FAVORITE thing is anything and everything with peppermint. My Gluten Free Peppermint Bark Brownie Cheesecake was a huge hit a couple years ago. I think everyone loved it! This year, I decided to make something a little different. These Chocolate peppermint chip cookies are amazing. Super easy to make, quick to bake, and they are full of chocolatey goodness! If you are looking for a cookie recipe to impress this holiday season, this is it!

Chocolate Peppermint Chip Cookies

Delicious chocolate peppermint chip cookies recipe that are perfect for the holidays.

Ingredients

  • 1 1/2 Cups Brown Sugar
  • 1 Cup White Sugar
  • 1 Cup Butter melted
  • 2 Large Eggs
  • 2 tsp Vanilla Extract
  • 4 TBSP Water
  • 3 Cups Gluten Free Flour
  • 1 Cup Unsweetened Cocoa
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 1 Cup White Chocolate Peppermint Chips

Instructions

  1. In a large bowl, cream together both sugars and butter together. Add your eggs, vanilla and water. Beat until you have those ingredients well blended.

  2. Add your dry ingredients one at a time, making sure to mix each ingredient in thoroughly before adding the next. 

  3. Fold in your white chocolate peppermint chips (I like these).

  4. Put your dough in the fridge for 1 hour. It will be very thick. That's OK!

  5. Preheat your oven to 350 degrees and line your baking sheet with parchment paper or your silicone baking mats (these are a really good price!!).

  6. Using your cookie scoop (another amazing price), place the cookie dough on the cookie sheets and bake for 9-10 minutes. Do not over bake. Allow the cookies to cool on the baking sheet for 5 minutes before placing them on a wire rack to cool.

**Be sure to store your cookies in an air tight container.

Chocolate Peppermint Chip Cookies

Don’t these cookies sound amazing? They are the perfect amount of chocolate and peppermint. My son would prefer MORE white chocolate peppermint chips, while my daughter would prefer less. One thing you could do is sprinkle extra chips on the cookies when they come out of the oven. However, it’s definitely not necessary (well…unless you are like my son)…the cookies are delicious just the way they are.

Gluten Free or Not!

I made these chocolate peppermint chip cookies with Namaste Foods Gluten Free Fourchocolate peppermint chip cookies. However, if you don’t have to or want to make them gluten free, then don’t! Simply use the same amount of flour that is not gluten free! They turn out perfectly with either flour you choose to use!

You have plenty of time to make these for Christmas. If you are having a hard time finding the white chocolate peppermint chips, check your local grocery store. I found my at Kroger. If you have a Christmas celebration that is after Christmas (like I do), order them on Amazon!

Easy Fudge Recipes Anyone Can Make

One of my favorite desserts is fudge. I remember going to Mackinaw Island when I was a kid and buying all kinds of different flavors of fudge. If you aren’t able to get to Mackinaw Island to buy their delicious fudge, then these easy fudge recipes are for you! Cranberry Banana Muffins Recipe

Every single week I make banana muffins for the kids to have in their lunches or with their breakfast. One of our favorites is the Banana Muffins with Chocolate and Peanut Butter. This week, I decided to mix things up and make cranberry banana muffins. I don’t know if it’s because we just had Thanksgiving and I love everything cranberry this time of year (no pumpkin spice for me), or what, but I thought the combination would be really good! And it was so good!

Cranberry Banana Muffins

Delicious recipe for gluten free cranberry banana muffins. Not gluten free? Simply sub in your favorite flour instead!

Ingredients

  • 1/2 Cup Butter, softened
  • 1 Cup Sugar
  • 2 Large Eggs
  • 1 tsp Vanilla Extract
  • 3 Med Bananas
  • 1 TBSP Milk
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 2 Cups Gluten Free Flour
  • 1/2 Cup Dried Cranberries

Instructions

  1. Preheat the oven to 425 degrees. Prepare your muffin tin with liners or use this amazing silicone muffin pan.

  2. In a small bowl, mash your bananas and set aside. In another large bowl, cream together your softened butter and sugar. Add in the eggs, vanilla extract, milk and mashed bananas. 

  3. Next add your baking soda, salt and gluten free flour. Be sure to mix with your hand mixer after each new addition. I like this gluten free flour.

  4. Fold in your dried cranberries. Cover your batter with plastic wrap and place in the fridge for about 50-60 minutes to chill. 

  5. Fill your muffin tins completely (trust me on this...fill it up)! Place in the oven at 425 degrees for 10 minutes. Lower the temp to 350 degrees and bake for an additional 10-12 minutes. Allow to cool for a few minutes before placing the muffins on a cooling rack to cool completely.

*This recipe can be made with either gluten free flour or regular flour. Your choice!

These cranberry banana muffins turned out delicious! The kids loved them. Funny thing though…my son came home from school today and said, “those banana muffins were good, but the chocolate almost tasted like fruit. It was also harder that normal”. Really dude? Hahaha! The dried cranberries give a nice tartness to the muffins. One of these days, I’d like to try this recipe with fresh cranberries!

Chocolate Oatmeal Cookies Recipe

A few years ago, I started making these amazing chocolate oatmeal cookies. They literally were loved by all. Not even joking. Fast forward a bit. I found out I needed to follow a gluten free diet and I instantly stopped making these amazing cookies. While I could find gluten free flour, I was at a loss for gluten free rolled oats. Until now! I volunteered to bring gluten free goodies to Thanksgiving tomorrow and one of the things I am bringing is a huge platter of my chocolate oatmeal cookies! Another thing I’m bringing (and you will want to check this recipe out too) are my yummy Gluten Free Jam Thumbprint Cookies.

Chocolate Oatmeal Cookies

Delicious recipe for chocolate oatmeal cookies. They are to die for and every single person who eats one will love them!

Ingredients

  • 1 Cup Butter softened
  • 1/2 Cup White Sugar
  • 1 Cup Brown Sugar packed
  • 2 Large Eggs
  • 1 tsp Vanilla
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 TBSP Unsweetened Cocoa
  • 1 1/2 Cup Gluten Free Flour
  • 3 Cups Gluten Free Rolled Oats

Instructions

  1. Preheat your oven to 350 degrees. Line your baking sheets with parchment paper or use these silicone baking mats.

  2. In a large bowl, cream together your softened butter and sugars. Next add the eggs and vanilla and mix with your hand mixer. 

  3. One by one, add the baking powder, salt, unsweetened cocoa and gluten free flour. User your hand mixer to to mix after each addition. 

  4. Now it's time to add the gluten free rolled oats. Do not attempt to use your hand mixer. If you have a stand mixer, it may work, but I am not sure, as I do not have one. The best way I have found to mix the rolled oats in is to wash your hands and use your hands to mix it or wear food safe gloves. 

  5. Chill your chocolate oatmeal cookie dough in the fridge for at least 40 minutes.

  6. Using a cookie scoop, place your cookie dough on the parchment paper or silicone baking mats. Bake for 9-11 minutes. 9 minutes will give you an amazing chewy cookie. If you like a crunchy outside with a chewy inside, bake for 10 or 11 minutes.  Allow the cookies to cool on the baking sheet for about 5-7 minutes before transferring to a wire rack.

*These cookies freeze well! Simply place in freezer bags. You can take a cookie out, one by one, nuke in the microwave for about 20 seconds, and then you have a cookie that tastes like it is fresh from the oven!

You guys, these cookies are amazing. I really can’t stress how awesome they are. Traditionally, oatmeal cookies have raisons and cinnamon in them. Neither of those things are my favorite. One day I decided to see what it would taste like to put unsweetened cocoa in the cookies instead. And thus, the chocolate oatmeal cookies were born!

If you don’t follow a gluten free diet, simply make these with regular flour and regular rolled oats. All of the measurements for the ingredients stay the same! Also, if you want to make these cookies ahead and freeze the, you can! Allow them to fully cool and then place them in freezer bag. Either take the cookies out, one by one and nuke them in the microwave for about 20 seconds, or take the whole bag out the day before you need them and you are good to go!

Other Cookies you Must Try

Any of these recipes can be made gluten free or with regular flour. Some have asked me in the past about almond flour or coconut flour. I do not bake with either of those flours, so I am not sure if they can be used in the same way as gluten free flour and regular flour.
